I saw the produce guys stocking fresh squash the other day so I took a chance on a 'fresh' spaghetti squash. It was just 'OK' ~ not horrible but not as much flavor as I like and somewhat watery. But it was what was for supper, along with some defrosted marinara.

I toasted a sub roll that was in the freezer and that was the accompaniment to the meal.

THanks. Yes, those are still hothouse tomatoes but they are actually quite good. We have a lot of hothouse complexes here, acres and acres of them, particularly bell peppers of all colours are locally grown.

I grilled a couple of burgers on the charcoal grill. Just made some frozen mixed vegetables to go along side. I think Dane had some chips with his cheeseburger.

I had a Wendy's chicken burger about 10:30 last night....................... Why so late? Well, I fell at Coscto yesterday at noon, and fractured my ankle. I tripped over one of their wooden pallets, fell on my rear, scraped the side of my leg just above the ankle and must have twisted that ankle/foot. Pain wasn't too bad, but they took an incident report. I live only about 2 miles from Costco and was able to drive home. By the time I got out of my car in our parking garage the pain was really bad and ankle started to swell up. I have a sturdy shopping cart generally in the parking spot and leaning on that I made it to the elevators and home. Called neighbour Anne who came with icepacks and sympathy, but At about three I called an ambulance, and then spent the next 7 hours in the emerg. There is a crack in the ankle, I have a plaster cast and will see an orthpaedic specialist on Monday to see if I can get one of those fancy walking boots. For now, NO WEIGHT on the ankle. Son Danny had crutches, so that's how I will get around.

Monday the countertops are going to be installed in my kitchen.

Daughter-in-law Lisa will bring lunch today. I will be calling in favours to help me deal with everything. Chances are I'll lose some weight, it's really difficult to snack when using crutches to get to the food, and there's NO ALCOHOL because of the pain meds! See, there's always a silver lining. Tomorrow is my b-day, we were hoping to go out! LOL

Of course, in hind site, you now know you should have called for medical assistance from the store.

But you didn't want people to stare......

And the boys would worry...........

I would think with a plaster cast you're out of luck on the blow-up boot like my friend, Lyn, is wearing with her cracked itty bitty foot bone.

STAY OFF THE LEG.

Hope you can get off the pain meds soon because vodka is a much tastier way to induce sleep....

I've got everything ready to cook for our neighborhood patio party this afternoon. It's like a big pot luck with everyone bringing their own beverage and a dish to share. Jim is hosting and decided he wanted to grill hot dogs for everyone. It's unusual as normally we just do random dishes, some savory, some sweet.

I was shocked at one 'theme' patio party (pierogi & Eastern European) ~ I decided to make Haluski to take. It's such an easy dish. That time I included some sliced smoked sausage but today, since I know a couple vegetarians are coming, I'm only going to include cabbage, a bit of onion, a couple carrots (cut thin strips with a peeler) and some Muller's noodles. My guess is the entire pan full will be gone when we come home. So inexpensive and good.

I had a chicken breast in the refrigerator that I had poached when we didn't need it for supper. I was going to make chicken salad for my lunches but didn't have any grapes ~ and I really, REALLY like grapes in my chicken salad.

I was scrolling through my recipes file and the recipe for Buffalo Chicken Dip caught my eye. I don't have a clue why. But ever since I saw the name I've been hungry for it. So, (you guessed it), I ended making it for our lunch. Well, not our lunch, exactly, but something to eat this afternoon with some chips.

I make mine a bit different than others. I shred the chicken and pour on some of the Frank's Buffalo Wing Sauce and put that in the bottom of a casserole dish. Then I slowly heat a block of Philadelphia Cream Cheese with about 3/4 c. of Hidden Ranch Original Salad Dressing until it bubbles and the cream cheese combines with the salad dressing. This gets poured on top of the buffalo wing sauced chicken. The casserole goes into the toaster oven at 350° until the top starts to get golden and it's all bubbly and heated through.

Then I gently mix the chicken & topping, just a bit, similar to when you make a marble cake ~ not to combine completely but just intertwine the ingredients.

When I spoon a serving on to a plate (this is just for Dane & I) then I dump on a handful of chopped celery, nice and crisp and cool, to eat with crunchy tortilla chips.

Everyone seems to make the dip differently and that's how I make mine.

And now that I've had some I'm satisfied!

Son brought a great chicken salad last night, DIL brought coffee and a muffin this morning. THey are coming back later with my "birthday dinner". Yup, 77 years old today. Had a call from the insurance company for Costco yesterday. They are interested in my condition. It will be interesting. Their contact asked me if I was planning on legal action. LOL I said that I can't make any decision until I have met with the orthopaedic specialist, but I told her about all the extra expenses I will have since I can't walk etc.

I just noticed that it has been a month and a half since I posted a recipe.  I have been cooking though.  Charlie has made a lot of new friends at two car clubs he has joined since he customized his 93 Caddie. He has been going to a couple a week.  He has had them over twice for BBQ.  First time it was ribs and brisket, second time it was ribs and lamb. In between another friend of his asked if I could do some ribs for his daughter's high school graduation.  Turns out he wanted me to do 16 slabs.  My smoker isn't big enough to do more that three at a time. It took  four days to do that many.

Today I was planning to do an egg drop soup that had creamed corn, chicken and thickened with corn starch.  When I took the chicken thigh that I got yesterday out of the refrigerator and opened it up, it was spoiled so I went to plan B. I had the shrimp in the freezer and everything else on hand and made this Cajun pasta dish instead.

Tonight was the fish I thawed yesterday, before we decided to go out with Jim. Last night I chose a pepperoni pizza, had it last night & today for lunch. I have 2 pieces left to have for another lunch (or tossed if I don't eat it before trash day.....)

As usual, I had grouper and HE had salmon. We split a baked potato and I made one of my favorite vegetables, peas & carrots ~ not because I particularly like peas & carrots but because they brighten up a dinner plate so much! LOL

I thawed out a couple pork steaks for supper. One had a thick layer of fat on the edge that I trimmed off. I used that to render down in just a tiny bit of olive oil to be the 'meat' flavor in my Garbanzo & Kale Stew to have with the pork tonight.

I'm sure when HE thinks it's ready he'll be my taste tester ~ he's already eyeing the pan! LOL

Thanks. Don't know if I'm on the mend. Leg feels tight in the cast, like it may be swelling up. Appt. in the morning with specialist. Will see then!

Danny and Lisa brought pizza. Danny asked what I wanted, I said pizza is good warm, cold, leftover, lunch, supper or breakfast and doesn't require a plate or utensils. Hopefully I get a walking cast tomorrow. Pain is not bad enough even for medication.
