I took care of breaking down the 3-pack of baby back ribs I picked up at Sam's Club the other day. It always amazes me how meaty the pork ribs are.....and they're packaged 3/pack.

I usually pull off the membrane on the underside and cut the racks in half. That way it's easier to store them in the freezer in gallon bags. If we're having company I can easily pull two half racks and have plenty to share. But for the two of us, a half rack is more than enough.

I cooked in the oven today ~ it was finally sunny but not very warm. Having the oven on wasn't overwhelming in the house for a few hours. I 'steamed' the half rack for about 1-1/2 hours at 325° then took off the foil, drained the steaming liquid and let them roast, uncovered, for another hour. I added some mixed up sauce I put together from what was in the refrigerator and they got nice and sticky, which is how I like them.

I drove Lyn to Orlando this morning to have her car serviced and we wasted half a rainy day at a couple malls. Surprisingly, neither of us found a thing we wanted to even try on let alone purchase.

When I got home this evening it was 'Eat-What-You-Find/Want' night.

He had some leftover chicken & fries. I ended up with a couple leftover BBQ ribs and a salad I threw together.

Did a shift at my volunteering job this afternoon..While "working" I kept thinking about dinner, then suddenly remembered that I had two small containers of shepherds' pie that I bought a couple of weeks ago. Still in the freezer, that's what's in the oven now. They smell nice, they'll do for supper.

After a trip to the Korean market today, we had all Korean food. It is kim bob (rice roll that looks like sushi) Spicy Pork Bulgogi, Galbi ( marinated beef ribs) seaweed, medium grain rice and salted sesame oil for dipping.

I thawed a couple burgers to put on the charcoal grill ~ it was a nice day and a grilled burger sounded just right. Made a side of potatoes & beans, cooked together, because there wasn't a lot of beans to use as a side. I've done this before and it was pretty tasty.

I love having a piece of London Broil (top round) steak marinating in the freezer......when I take it out to thaw the flavor of the marinade permeates the meat and makes it tender and flavorful. I always grill these steaks over charcoal for that added flavor.

Added a baked sweet potato & steamed asparagus as sides to complete the meal.

Former neighbor & friend, Jeanie, is coming to visit with her 'new' husband, Larry. She's been gone from our Villas for 3 years and we've stayed in touch. It was wonderful she & Larry had the opportunity to come back to The Villages to visit.

They've been on the road most of the day so I've invited them to supper. I have a Krafty Crescent Lasagna planned with a tossed salad ~ easy peasey.

There's a youtube video of the recipe in case you're curious ~ it was a 1968 Pillsbury Bake Off Winner and I've made it for years.

I took a pic of the Krafty Crescent Lasagna when I slid it into the oven ~ but didn't think to take a pic when it was baked / sliced. Oh, well, just imagine this is all golden brown and crispy.....

I reheated a slice of the leftover Crescent Lasagna for my lunch ~ it got a bit dark in the toaster oven but it does show, somewhat, the layers of meat & cheese on the inside that mimics a 'lasagna'.....

Today is Dane's birthday ~ he gets to pick what's for supper.

I was kind of hoping he'd choose going out but, that's not what he wants.

He did, however, pick an easy meal.....CHICKEN WINGS! Woo Hoo! I pulled them out of the freezer to thaw and I'll come up with a side (probably the Crispy Crowns he enjoys once in a while) and he'll be happy.

I'm going to make them like I did the last time ~ the steamed / baked method Norm put me on to. It's easy, not too messy, and works well on a rainy day since the grill method is a 'maybe-maybe-not' on a rainy day.

I’ve been on a Baking kick lately so the other day I made paczki for the first time. Steve wanted a custard filling so rather than make a jam filling (which I wanted) I figured his hips could use the extra pounds so I finally made them.

All your foods, pictures etc., always look so good. I have some lamb chops defrosting, and looked for a recipe in one of my Indian cookbooks. My problem always is that most recipes are for at least 4 people, so I basically have to wing it to make something just for myself. Going to make some Punjabi lamb chops today. Stay tuned, and we'll see if it becomes epic or fail! LOL

The wings came out crispy & tasty.  HE got his Buffalo Hot Wings and I had a mixture of sweet hot stuff I like.  I got the crispy crowns done in the cast iron skillet and none burned!

I wasn't going to do any dessert because HE doesn't usually like to have any but, hey, a birthday is a special day and he just had to 'suck-it-up' and have a piece of (store bought) cheesecake.

Jeanie & Larry are heading back to the northern snow country in the morning ~ Brrrrrrrr!  So they asked if we'd like to go out for supper tonight.  Jeanie wants to eat at her favorite restaurant, El Ranchito Mexican Restaurant one final time.

So, being the nice friends we are, we said, "Sure!  That sounds like fun."
