I usually pull off the membrane on the underside and cut the racks in half. That way it's easier to store them in the freezer in gallon bags. If we're having company I can easily pull two half racks and have plenty to share. But for the two of us, a half rack is more than enough.
I cooked in the oven today ~ it was finally sunny but not very warm. Having the oven on wasn't overwhelming in the house for a few hours. I 'steamed' the half rack for about 1-1/2 hours at 325° then took off the foil, drained the steaming liquid and let them roast, uncovered, for another hour. I added some mixed up sauce I put together from what was in the refrigerator and they got nice and sticky, which is how I like them.
