To heat them....if you have a steamer rack, they will heat up, and still be moist. I do that with chicken and beef.

I would slice them thinly, then put the slices on top of a great salad.

Chile Chicken with Snow Peas Salad from Liz Berg

Ingredients

4 boneless, skinless chicken breasts
1 cup chile sauce of your choice
1 tablespoon vegetable oil
2 cups of snow peas, thinly sliced
2 green onions, thinly sliced
1-2 cups bean sprouts
1/2 cup mint leaves
1/2 cup cilantro leaves
Make Pan Fried Turkey Cutlets & Red Cabbage

Instructions

Preheat the oven to 425. Place chicken on a baking sheet. Combine 1/2 cup of the chile sauce and the vegetable oil and pour over the chicken. Roast for 20-25 minutes or until cooked through. Remove from oven and set aside.
Place the snow peas, green onions, bean sprouts, mint leaves, and cilantro leaves in a bowl. Pour over the rest of the chile sauce and toss to combine.
Divide the salad mixture between four plates. Slice the chicken and serve with the salad.

We went out for Italian. DH had lobster cannelloni, Roomie had mussels in some kind of wine tomato broth, and I had lasagna made with a Bolognese and fresh pasta. A side order of garlic bread, salad with creamy Italian dressing and spinach in olive oil. It was very good. The restaurant was too hot. I don't know what was wrong with the air conditioning. I now reek of garlic and will be a social outcast for a day or two until it leaves my system.

I had a small pork tenderloin, second half of one I split when I bought the package, so I just seasoned it with s&p and grilled it. I had mashed sweet potato (HE had a baked, well, microwaved & then crisped on the grill, white potato) and some asparagus. Nothing special but tasty.

The kids went to Las Vegas for the weekend. Charlies relatives all live there or are going to be there at the same time and most have not met Cassie yet. I get to use up all the left overs, one of which I had tonight. It is a prime ribeye from Costco. It was on the grill for 15 minutes and still raw inside. Maybe it's time to replace it.

Gonna have a ham and cheese on a Kaiser roll with onion, and tomato, and puddles of mayo.
DD is here making an ice cream cake for tomorrows fathers day celebration.
We are having Roy Rogers roast beef sandwiches. I will do a eye round on the George Foreman electric rotisserie.
Tina is cooking a pot of meatballs in tomato sauce! .....

I am just cleaning up from supper here. I had my first real dinner guests to partake of food seated at my new, made by my children table. We had oven roasted potatoes, a whole bunch of local steamed asparagus, Salmon Wellington, which was waaaayyyy better than I ever thought it would be.

Bacon wrapped scallops as an appy, and local strawberries and French Vanilla ice cream for dessert. All washed down with some of Niagara's best of the vine. I think it doesn't get much better than this!

I couldn't face another meal of chicken tonight so I looked in the freezer and saw a container of stuffing mix for peppers or zucchini....that would do just fine. I also thawed some marinara to top it with. I had one stalk of broccoli left so I added a shredded carrot for the color combination I love.
