  • Coarse salt and ground pepper
  • 1/2 cup dry sherry or apple cider
  • 1 tablespoon chopped fresh sage, plus leaves for garnish
  • 1 pound butternut squash, peeled, seeded, and sliced 1/8-inch thick
  • 1 pound apples, such as Gala, Cortland, Baldwin, or Macoun, peeled, halved, cored, and cut into 1/8-inch thick slices  ( I used granny smith,I had 2)
  • 1/2 cup freshly grated Parmesan cheese


  1. Preheat the oven to 350 degrees. In a 10-inch skillet, heat 2 tablespoons of oil over medium heat. Add leeks and 2 tablespoons water; season with salt and pepper. Cook, stirring occasionally, until they begin to brown, about 10 minutes. Add sherry and sage and cook until liquid is reduced to a glaze, about 3 minutes; set aside.
  2. In a 2-quart shallow baking dish, arrange squash in overlapping layers; season with salt and pepper. Spread leeks evenly over the squash.
  3. Arrange apples in an overlapping layer over the leeks. Brush apples with remaining tablespoon oil. Cover tightly with aluminum foil. Bake 45 minutes.
  4. Uncover and sprinkle cheese over the top. Raise the oven temperature to 450 degrees and bake 10 minutes, or until the cheese has melted and is golden brown. The tip of a paring knife should easily pierce the gratin. Let cool 10 minutes before serving. Garnish with sage leaves.

Have Tina get you and for her too, a Calorie King carb counter book.it is sold everywhere and it is small but FULL of the info you need.Tells you cal,carb,fat,sugar etc in ALL food.I tell that thing is my bible..

Jimmy, just a thought, do you have one of those blood glucose meters where you check your blood sugar? With a pin prick...It is very easy to do.
I have one for myself, which I use occasionally---just for my own benefit.

I think that will help you a lot in planning foods to eat.

yikes..I happy with my wal mart cheap Hamilton Beach $30.hahahaha ( 6 yrs now,plus I do not use it that much).. My new range I bought was $900.and I am thrilled with it.Happy I do not have expensive taste lol..

His Dr should have given him one. Kits are free ,lancets are cheap. It is the strips I had to fight to get. Plus they are exprnsive. wal mart have some you get cheap and they are good.OTC no script needed.

I test 4 to 5 times a day.

I don't know if I have expensive taste or not. Some things I buy are expensive and other things I want on the cheap. I dig hard for bargains. If I want something that is very expensive, I can usually find it at a bargain price, eventually. I once saw a pair of crocodile shoes that I wanted but they cost over $1000. Funny enough, seven years later I found an unworn, new in box pair for $150.

yes greenb/peas and corn and root veggies have high carbs.no banana for me or citris except lemon/lime juice..slack on apples and lots of fruit. most berries are the lowest.


no grains that much for me. oatmeal, thats it.


wwflour is out for me..I bought almond and coconut flour very $$ and did not like the way it worked up..most type 2 like it though.I ended up throwing it out..


I would rather do without then try to make something  'just like;' and it isn't..



Tina picked up a cabbage today to do the same thing, only with bow tie pasta for me, and elbow macaroni for her likes.  NO pasta lol.. BTW I eat cabbage ALL the time brings down my ### really fast.. Fried or slaw.With or without pork..

I have 5 meters. One for my purse,one in the bedroom,one in the LV room,one in the car ,one in my kitchen. All free.


You can get a set up to  download your reading to send to doc or to your pc. from your meter.

This weekend is our Thanksgiving weekend.  Family coming over tomorrow for chicken wings for some, turkey breast for others.  Sprouts and squash casserole, salad, oven baked potatoes.  Ice cream for dessert.  No pumpkin pie in this house!

Boy, is this an understatement! Barb has difficulty with carbs. Remember Highlands 1800? I chatted a lot with her. She had diabetes for years and red meats caused her to spike. She did OK as long as she had a moderate diet, sugar substitute and stayed away from red meats. That's why it's such an ugly disease. There is no perfect diet for everyone. There are some things you should definately stay away from (ie: KK donuts, ice cream, cakes & cookies, RICE KRISPY TREATS, candy) But you have to find a balance you can live with and things you can eat that do not cause you to have elevated sugar in your system. That only comes from trying different things and testing your blood as Barb does to find what affects you and what doesn't.

Well ....I finally figured out how to use the glucose test machine.
I took the reading on my right vein on the hand, and it worked great.
Tina was plugging in the strip backwards ( I think??)

Oh Geeze... I forgot....it read "97" . Tina said under 130 is ok???...or is it 120??

I made a chicken thigh in fresh tomato sauce over pasta for supper....good sized salad to go along with it. The pic makes it look like a lot of pasta, but I'll guess it was about 3/4 cup full all spread out. I had started to cut up my chicken thigh when I realized I had not taken a pic....how could I forget??

Jimmy you do not take your blood from a vein. You use the fatty part of your finger end. Or on the side ,right by your  nail bed.



the meter will tell you if your strip is in wrong.It will say Error..


I am happy for mine to be under 150.  95 I would be having a low..


I want to stay 100 to 120/140.


what meter do you have??

Jimmy ~ call your doc office and take that thing in and tell them to show you how to use it and ask about what time of day, before or after meals, etc. Ask what readings should or shouldn't be. They should have given you instructions and training. That's ridiculous. You (via insurance, etc.) are paying them good money. You should have information you need to be an active participant in your health care.

Grouper is SO good. How much does it cost near you? At the grocery store here they want $17.99/lb. At the seafood market I found near St. Augustine they were asking $13.99/lb. That still seems awfully high to me. I mean, it's a BIG fish. You'd think they wouldn't have to catch as many to have a lot of supply.....

And you did a wonderful job. Looks great!
