PORCUPINE MEATBALLS !!
So, that's what I'm making. I checked some of the recipes (definately did NOT care for the one on the TV show) and put together a little of this and a little of that. My meatballs are in the freezer firming up before I brown them. 24 will be allowed to freeze solid and then stored for another time. I plan to brown my meatballs and then simmer in the can of Golden Mushroom soup I picked up by mistake but was going to use to make Tina's 'Susan's Meatballs'.....so this will be my 'Tina's Meatballs' meal! (Since it's not the same as she makes I cannot possibly use the same name for the dish.....)
I'll probably make a bit of rice to go along side so the gravy has a place to land (but not much because Mr. Amazing is in a grumpy mood and I don't want to throw off his low carb craving). I also have some broccoli because it's always nice to have that bright green.
Maybe I'll throw together a nice cucumber salad....yeah, that would be good

IF you are taking your diabetes seriously and want to eat the right foods , then do some research.
The desserts you can eat are out there lol.
