Here is the Cuban Steak recipe and a couple of chimichurri sauces i have used with it. If I do tacos with it I'll use the pineapple salsa instead.

Cuban Flair Beef Chuck Eye Steak

Total Time: 25 mins min
Serves: 4 -6
About This Recipe
"All we can say is....YUM! Goes great with Yellow rice. Fast week night dinner under the broiler, or can be elegant enough for grilling with company with some homemade bruschetta and Chimichurri sauce."
Ingredients
4 lbs chuck eye steak, 1-inch thick, beef
2 tablespoons garlic-flavored olive oil ( or mix some olive oil with garlic powder or fresh minced garlic)
1 tablespoon cajun seasoning
2 tablespoons adobo seasoning ( with or without pepper)
1 teaspoon salt
1/2 teaspoon black pepper
Directions
Preheat broiler (or grill).
Place in oven safe baking dish (I have a special glass one). Pour garlic oil over top of steak, coating the top. Sprinkle on the spices, any order.
Broil about 20-25 minutes, depending on the thickness of your steak. I start mine at the same time as my Spicy Cuban Yellow rice and when the rice cooker is done, so is the steak, about 25 minutes.

Chimichurri Sauce
Bon Appétit  | October 2002

yield: Makes about 1 cup
This garlicky sauce from Argentina is great spooned over beef or chicken.



ingredients
1 cup (packed) fresh Italian parsley
1/2 cup olive oil
1/3 cup red wine vinegar
1/4 cup (packed) fresh cilantro
2 garlic cloves, peeled
3/4 teaspoon dried crushed red pepper
1/2 teaspoon ground cumin
1/2 teaspoon salt

Puree all ingredients in processor. Transfer to bowl. (Can be made 2 hours ahead. Cover and let stand at room temperature.)



Chimichurri Sauce From jillian @ cooking.com

Yields about 1 cup. Can be made up to 2 days in advance. Store well covered in fridge. Bring to room temp for serving.

1 cup packed flat-leaf parsley
1 cup packed fresh mint leaves (or cilantro)
1/3 cup olive oil
1/4 cup fresh lime juice
2 T. coarsely chopped garlic
1 tsp. ground cumin
1/2 tsp. kosher salt

Put parsley, mint, olive oil, lime juice, garlic, jalapeno, cumin and salt in food processor. Process, stopping to scrape bowl as often as needed, until pureed into thick sauce. Taste for seasoning and chill until ready to use.

Tina made a pan of Moussaka eggplant this morning at 8:30.
She left, and I watched it till it baked in the toaster oven.

Just shoved three pieces down. It was delicious and not a bit filling.

It feels so good to be home. Three weeks at DD#2's was a long, l - o - n - g, L*O*N*G time. I was happy to be able to help out when she had to recoperate from having her tonsils removed but I hope it doesn't happen again! LOL She did really well coping with the surgery at her age (almost 40). The surgeon said there was a lot of scar tissue from really bad infections so it was good she finally had them removed. I sure hope the removal rids her of the problem of strep 4 to 5 times a year.

Jake was happy to have me there, although I really didn't do much cooking. The first week they both wanted pork, sauerkraut and drop noodles that we've had for years & years. After that, it was mostly frozen stuff for the kid, other than his breakfast when he wanted his "usual" of a dippy egg and a hard cooked egg with crustless toast.

Oh, yeah, I did make crab legs as his reward for making the honor roll all 4 grading periods and being promoted to 6th grade....crab is his greatest treat! His mom was on the couch with popsicles and slushies so it really wasn't a super expensive meal for me to buy just for the 2 of us. I do think she thought it was a bit mean, but, hey....FOUR honor rolls in the year deserves a reward!

I have to get Cats meds and flea meds and that will be the only outing for me.My car does have a super air conditioner tho.so that is good. Hope my house air does not crap out. Shocked

I've got a chicken breast and packet potatoes on the grill and limas on the stove.  All by request.

I guess he's tired of frozen meals.....

He did a fabulous job of keeping up in the house - it looks better after returning after 3 weeks than it did when I left.  I should leave for a couple weeks more often!  The neighbor man told me there was a 'stream of women' going into my house (in jest) the whole time I was gone.  I replied, "well, they must have all have had cleaning rags because it looks fabulous in there!"

DH and Roomie spent 8 hours at the Playboy Jazz Festival yesterday and are a bit sluggish today. Dinner will be late. Salmon for them and a steak for me. I don't care much for jazz so I didn't want to go. To me, most jazz has no beginning and no end. I can't follow it. Dave Brubeck is about the only exception.

Great looking chicken, Barb. Nothing better than a perfectly roasted chicken and you hit it over the moon!

Jimmy, I can see why you were happy. Wonderful meal! Love the stewed beans (bet you didn't even miss meat since it's so rich).

Bugs - I'm with you on the steak instead of salmon. I like fish, but only white fish. Salmon rates right up there with cilantro for me! LOL

Everyone has been busy and all your meals look great.

I saw a recipe for Chile Rellenos Chicken Enchiladas that I thought looked really good but then I thought it would be better with pulled pork instead of shredded chicken. I asked Cassie what she thought about it with Carnitas and she thought it would be better with plain pork in the slow cooker. I decided to put it in the smoker with just salt and pepper rub instead of anything BBQ tasting. Here is the pulled pork. I'll make the echiladas in a day or two.

Did not miss meat. It was simple, and nothing fancy. The olive oil made the flavor, and the buttered bread helped too....
Ya know whats good? Toast, and pile the beans on the toast; top it with another slice, and make a nice sandwich.
Right now it's pouring rain out. I would love to make some snacks, and go sit in the car, and enjoy the pelting rain on the metal roof. That to me is so relaxing.

Dirk grilled some Italian sausages on the wood fire, I made some Pineapple Salsa that Norm posted a few days later, and I made some Bean salsa Michelle posted, and a bit of coleslaw with yogurt + mayo dressing, bean salsa and coleslaw were a good combo for the sausages
