Norm, what brand smoker do you have? Do you use it often? What do you cook in it? I have seen your brisket, ribs, pulled pork.

We are getting a head start on dinner too!
Good idea Barb.....to cook before it gets stinky hot outside. It is only 79 here, but the humidity is here with it.

Tina has a lasagna in the grill baking for the next door neighbor. And a smaller one for us, in the toaster oven baking.

I did burgers on the grill and split the one lonely bakery roll so we could share....said we were having the burgers 'open-faced'. Made vegetable 'spaghetti' to take the place of potatoes and did some broccoli (blanched & shocked) sauted in evoo with a sprinkle of red pepper flakes.

HI is 105 ,114 in some areas.Tomorrow hotter.Blinds closed,drapes pulled,2 box fans going,stand up fan going,ceiling fans going.it is 82` in my house.Plus it will be staying this hot for the next week,After that? Dogs and cat wanted out lmao, out they went and turned right around and came back.


Salad is fixed but I am not hungry yet..

Mmm.  The last time we used our big ice cream maker, we made butter pecan.  It really turned out well.  It's one of my favorites but it's not one of Brian's favorites, even though he sure gobbled it down!

I just ordered some stuff online that we needed and added some pistachios to the order to make pistachio ice cream, as it's one of my favorites, too.  But I don't put any green food coloring in mine.  I never had pistachio almond but it sounds delish.

We polished off the last of the 3 pints from the new machine last night, I think.  I don't remember if I posted it here but for our initial batch in his new machine we made vanilla with the fresh vanilla beans and then added cut up chocolate bar and cut up Reese's Peanut Butter Cups, too.  It turned out so good!  I also got a very good chocolate bar with raspberries in it, too, for our another batch as he loves raspberries with chocolate, as do I (who doesn't?!).

I had to laugh, Jimmy, as one time when we were on the Cape (Yarmouthport) at Brian's sister's house, it was the 4th of July and Brian's sister was having a get-together since we were in town. Brian's dad phoned and said, "Brian, it's going to be a scorcher today -- it's going up to 80!" We laughed, as in the middle of summer, it's 80 when we get up and the humidity is usually in the 80s as well!

This is when we should all thank God for air conditioning. I know I do on a regular basis, especially in bed at night when it's absolutely miserable if you're hot or, God forbid, sweating. I like to be cold at night. Cheap as all get out in winter -- not so much in summer!

Whew. This was too much work. First I made the pulled pork in the smoker yesterday, then I roasted and peeled the the Anaheim peppers, stuffed them with the pulled pork which was simmered with a sauce, then wrapped each one in tortillas and baked them with tomatillo sauce and cheese. The original recipe used chicken but I wanted to use pork and that took an extra day.

Bugster, I have an Horizon smoker and I so far this year I've used it 4 or 5 times in the last couple of months. Besides the ribs, pork and brisket, I have twice made something called a 'fattie". It's cheese, sausage, chili peppers all rolled up in a bacon weave and smoked. I also smoked some brats with it.

Beth, the burgers look awesome. I like my fried onions big like that too!

Barb, your meal looks very refreshing....

We ate the lasagna, and Tina did a great job. I baked it in the outside grill.

Then Tina wanted to make a Few Meatballs to freeze. She did a great job, and reground the 5 lbs of beef and 1.5 lbs of pork. I helped her, and I just have to vacuum seal them in portions as soon as they are frozen solid.

You must have been exhausted....besides making the pulled pork and then the main dish, there were all the condiments, etc. I'm sure Charlie & Cassie appreciate it, but it'd be a long while before I did that one again.

Jimmy, I love to do what Tina's doing ~ when I feel like making up meatballs or meatloaf or anything that can be prepped and frozen. But I have to do a better job of organizing in my freezer(s) because I keep losing things only to find them much later, and that's not a good thing. But you got me in the mood for meatloaf. I think I'll grab one out of the freezer now to thaw and bake it in the grill. I've got some of those little fingerling potatoes that I can stew up with onions like Tina does so well to go along with it.

Thanks, Barb.  I'll have to give 'em a try when I find them on sale.

When we lived in Ohio our local Meijer's store carried a store brand chicken sausage with spinach & mozarella.  OMG, so good.  I would grill them and then let them braise a bit in some homemade marinara and then serve with angel hair / marinara.  

All I can find here is spinach and feta....any you know how I feel about feta.  Bleeeeeeeccccchhhh.  LOL

I think when Dane drives up to do some maintenance on the house I'll ask him to bring a cooler of stuff home for me.  6 paks of those sausages I love so much (they have to be refrigerated/frozen) and a jar of our local (NW Ohio) Betty's Salad Dressing, made famous by a lady back in the 1970's, Betty Timko.  It's unique to the region and it's not carried anywhere here in Florida that I've seen.  I have the recipe she gave to friends but it's just not the same as the commercially produced jar sold in the grocery store.
