I have some gruyere I need to get rid of before it molds so I think I will try a recipe I saw for grilled cheese. Seeded rye bread, gruyere and caramelized onions with thyme. The stove won't be on for long so I won't sweat for long. Last night it was shrimp salad rolls with avocado, tomato and bibb lettuce on grilled potato rolls. DH and roomie were in hog heaven. I don't eat shrimp so I fried up a piece of bacon and threw it in the roll with the avocado etc. It was good. I glommed in the mayo too.
