I found out Roomie is going to visit some friends so the scallops are out. We are going to have cannelloni with Italian sausage instead.

We went out for a late lunch with Lyn & Bill & Barb.....no supper tonight except for whatever leftovers you can find and reheat for yourself.

I ate a half bag of doritos and peach salsa ha.

I found some chanterelle mushrooms in a local grocery store. Very expensive, but that's what I'm making for myself tonight. Sautee with a bit of onion, garlic, then add a little cream and have over spaetzle.

I thawed some ham that was vacuum packed in the freezer since Easter and had it with some cheese and rice.

Thanks for reminding me Norm.
I have ham frozen from Easter also. It's got to be used up before it turns gray.Large amounts of sodium in ham or sausages, play heck with meats frozen; especially sausages.

Jewish apple cake.. I do not know why it is called that? Maybe oil instead of butter?
My Neighbor will be cutting the grass today so this is for her,except for the piece I had with my coffee ..

It is going to be very hot here too - in the mid to high 90's. I think I will make huli huli chicken for dinner with maybe a pasta salad of some kind.

I'm making my faux Applebee's Oriental Chicken Salad.....saw the dressing in a bottle in the refrigerator from the last time I made it and that's all it took for me to decide what to make. Funny how that only happens occasionally. Even more strange that I happened to have a 1/4 head of red cabbage to shred up to go with the romaine.

It's gonna be Susan's Meatballs today for supper.
Asparagus and seeded and cubed then boiled yellow squash.
Mashed potatoes for Tina and Gabe....not for me.
It's nice and cool here now. 71º now with a cold breeze. Thank you Canada!

The traditional way is to grill it over a fire of some kind. I am going to grill it on the bbq and turn it every 5 minutes till done.

Jimmy, do you ever do the seeded & cubed/ boiled yellow squash lightly mashed with butter and s&p?
Takes the place of potatoes....super yummy and super easy. It's especially good when you have the yellow squash that's gotten a little larger than anticipated in the garden. Beats feeding them to the goats!

Love, love, LOVE apple cake. It's so "fall"! And it's always so moist and sweet, even without a lot of sugar added.
Of course, a good whiskey hard sauce to spoon over, warm, isn't anything I'd object to, either.....LOL

My mother used to steam them whole and then mash them up with butter, salt, pepper. I haven't had some in a while. Think I might just have to buy some.

My mom made this with yellow squash. It's good.
SUMMER SQUASH CASSEROLE
4-5 small yellow squash (cooked, mashed and drained)
1 beaten egg
1/4C. cream
4 T. melted butter
1 med. oion
topping: 1C buttered bread crumbs, salt and pepper
Mix, add topping bake 350 degrees for 35 minutes.
