I am glad Tina's gut is feeling good. The rash is not good 'cause it means she is allergic to something she is taking, so I hope stopping the shots does the trick.

I tried that clam chowder recipe that Norm posted. I followed directions exactly but the half & half broke making it grainy. I added clams with their juice and it was too strong. The spice mix was ok tasting but now my gut is screaming. Finally it needs more bacon for my taste. Back to the hunt or just tweaking this recipe.

Poor Tina.....if it weren't for bad luck she'd have no luck at all! But, at least she's keeping her spirits up counting the hours until the itching stops. It does give her something to do. Maybe you can entertain her by getting a marker and playing "Connect the Spots" ~ that's always a fun game. LOL

Mr. Amazing is happy with tonight's supper. B * O * R * I * N * G !!! Nothing but s&p on the sauted chicken chunks (at least I ate mine with some dipping sauce ~ the sweet chili sauce). But he loved the Brussels sprouts and cauliflower. Then I told him he needed to count 1 & 1/2 slice of bacon with his portion of sprouts and he frowned. He is SO obsessive compulsive about this weight loss thing. I don't have a clue what he's going to do when he loses the last 2 pounds and then has to switch to maintenance.

I went to the doc today for my 6 month check-up. She did a baseline ekg in the office and has scheduled a nucleur stress test to check on my periodic chest pains and family history. Glad it's finally getting scheduled if nothing more than to give me peace of mind. When we get done with this part of the testing then I'm going to press for a sleep study. I'm so sick of not getting any good sleep due to my snoring. I've probably got apnea but could never afford the sleep study to determine if I need a CPAP to get a real night's sleep. Now that I have insurance to cover it I want it done to find out one way or the other.

I made the "Lucky Lady" 4 frozen breaded shrimp in the toaster oven, carrots and green bean mix ~ 1/3 cup, mashed potatoes and gravy.

I had three small hot dogs steamed, with mustard and green relish.?
Dessert later. Peaches!

I tried some variations in my regular meatloaf recipe. I also started eating it before I remembered to take a picture. We had it with roast potatoes, gravy and green beans.

I just had a nuclear stress test because my EKG was wacky but all is well.
When did we start to get advertising in a forum thread? I saw some ads on the bottom.
My gut is having fits from that spice mix. I only had one spoonful of the soup but that was enough. Dosed myself with Pepto, Maalox and Pepcid. A little relief has come my way.
I didn't want to cook so DH made himself a club sandwich. I took a bite and it was delicious. Maybe because someone else did the cooking besides me. LOl. Roomie reheated some mac& cheese and was in heaven. she loves it.

Yes, I think it worked out OK. I substituted some ground pork, nutmeg and lemon zest for bratwurst, dry bread crumbs instead of fresh and left out the milk, and I think it was a better texture and the taste was about the same.

Good to know, and great to have those ideas under my belt. hahaha Besides the belly.

Tina has a Greek Friend.... that makes what we call "Sea's Greek Meatloaf".

Basically, it's a basic pork, veal, and beef with bread crumbs and seasonings.
Formed into a loaf, and placed in a baking pan larger than the loaf.
Then takes 4 or 5 chicken thighs, browned first in olive oil and salt and pepper.
Then place alongside the meatloaf with 2 carrots halved and halved lengthwise. Cover all up to the top of the loaf, with plain tomato sauce.
Bake 350 till done. About 90 minutes.

I hear that some shops back East where you live sell a blend of pork, veal and beef as a meatball blend. I have not seen it here though. I top my meatloaf with brown sugar and dry mustard with just enough catsup to make a paste. After I paint that on, I do a bacon weave over the top.

Yes they do! ... 1/3 1/3 1/3 .... Beef / Pork / and Veal, and they call it Meatloaf Mix here.

Tina is hooked on the mixing in of Stove Top stuffing. I will eat it, but not the best meatloaf.

Mr / Mrs Stouffer is cooking stuffed peppers tonight.
Tina will eat the inside but not the peppers. Too gassy.

Other than the hives, she is coming along. Still weak, but that comes with time, when she starts feeling stronger....

It's good to hear Tina is feeling stronger.....time is the best remedy right now. I hope she's not trying to over-do anything and just takes it easy as the healing begins.

I had a piece of top round in the freezer and decided to slice it thin and make a vegetable beef stir fry ~ beef, onions, carrots (for the color don't you know....), celery and sugar snap peas, sliced in half. I marinated the beef in a bit of this and that. Wish I had written down what I put in because it was really tasty. Oh well, maybe I'll do as well next time. LOL

Looks great Beth! .... I like those snap peas. Never had them until recently couple years ago in the Chinese food.

Yeah! it takes time to feel better. We just finished with showering, and washing her hair. She is so exhausted, she barely made it back to the recliner.
