Tina has a Greek Friend.... that makes what we call "Sea's Greek Meatloaf".
Basically, it's a basic pork, veal, and beef with bread crumbs and seasonings.
Formed into a loaf, and placed in a baking pan larger than the loaf.
Then takes 4 or 5 chicken thighs, browned first in olive oil and salt and pepper.
Then place alongside the meatloaf with 2 carrots halved and halved lengthwise. Cover all up to the top of the loaf, with plain tomato sauce.
Bake 350 till done. About 90 minutes.
