I've got a quart of marinara with meat thawing in the microwave. I'm thinking of cleaning a bunch of spinach and having a lighter version of pasta.

Whole grain penne w/marinara meat sauce and spinach and a side salad.

This time the whole grain pasta was less than stellar. I wanted to let it cook a bit longer so it wasn't really al dente but it started to break down the more it cooked. The spinach was an excellent way to extend the meal and cut back on the carbs. But I have to say, I much prefer my favorite BLT pasta with the spinach instead of mixing it with marinara meat sauce. I don't think this will be a repeat to my menu rotation.

I've had it before and it wasn't bad....but the texture on this one (Mueller's) wasn't like the last one.  It didn't get mushy, it just started to break down.

I'm glad it was BOGO.....so I can justify tossing the one that cost me nothing.  The other box was regular pasta that I know I'll use.

good stuff.

at first I thought it was a composed salad (that you always make to look like it fell off a magazine page).

then I thought, no.....that's a bunch of cilantro and no way would she eat that in lieu of a real salad.

bet it was good.

I had a boneless chicken breast and no plan.....so I decided to make 'nuggets' and did an Oriental marinate: soy sauce, grated ginger, Mirin & a drizzle of sesame oil. I let it sit in the refrigerator about 2 hours. When I got ready to cook I realized I didn't have any rice flour so I subbed some corn flour for a light coating and then into a hot pan with a covering of oil to quickly sauté. The nuggets look more well done due to the soy marinate but they were just lightly cooked and actually very tender and juicy (Jimmy would have hated them.....). A fried rice pilaf (of sorts) and steamed asparagus to go along side.

$1.99lb chicken breast.just to lazy to fix anything with it so I made chicken salad loaded..

Tina was scheduled at 11 Am for a 3 hour surgery..
I have not heard anything yet...prayers....

Tina is now in her own room. Surgery went fine, except longer; because she was really messed up. Dr said, that she was severely infected, and diverticulitis was bad. They removed 10 inches of the sigmoid colon and did a reattach. That section of intestine, was plastered against the wall where the ovaries once sat.

She is on pain meds, and just resting and sleeping. God Bless her! She will be in the hospital for around 5 day's.

I needed a brisket for corned beef and remembered Cassie had told me about a year ago about a really good meat market down in the Mexican section of town so i went there then also got some steaks for dinner tonight and we had them along with salad. potatos and hominy.

Roomie has been feeling sick with gut pain for a couple of months now. She went to the doctor and her blood tests show an infection. She has diverticulosis and I am wondering if she has something similar to Tina's infection.
We had tuna sandwiches in pita bread. Roomie didn't eat but killed the pain with wine and vicodin. Not a good idea. I am making her call the doctor tomorrow and start scheduling the tests she needs. It is like pulling teeth. She won't get out of bed in the morning to do it so DH is going to haul her ass out of the blankets and make her do it before noon.

Jimmy, I'm so glad it's finally over for Tina. The anticipation of a surgical procedure is always so scary.....but she's through it and they discovered what the problem was....and fixed it. Now she is on the road to recovery and will, hopefully, glide through so she can get back out and running around on her usual schedule.

Just remind her she's still going to have to take it easy. She needs to take care of herself first....and that means remembering "you can't pour out of an empty cup" ~ no taking care of the multitudes of relatives and friends if it means wearing yourself out. Tina needs to concentrate on TINA being well.

OK, enough of the lecture.

Give Tina our love and tell her we're still keeping her close in thoughts and prayers.

(oh, and, You, too.....take care of yourself and watch what you're doing and eating)

I stopped buying any of those frozen meatballs. They all tasted like mushy styrofoam to me.

But it looks like your attempt to 'fix' 'em might just work.
