Bought a frozen shrimp etouffee dinner that was so bad, I had to make the real thing from scratch. I used a recipe for crawfish and adapted it for shrimp.

Barb, I have been looking at recipes for lemon meringue pie because I want to try making one after seeing your pie. The amount of lemon juice, sugar varies widely from 1/3c juice to 1c sugar, to 1 1/2 c juice to 1 1/4 cups sugar. What is the ratio of juice to sugar that you have had good results with?

pile of leftover flank steak..I might just eat it as is..Stressful day.. So stinking hot I went to one store,got cat litter and tpaper ,,done ..My TV wont come on. Sad called to  have carpet cleaned then had to cancel,they pump the nasty black stuff out the door to a truck,I cant have my front door open.To HOT>>

Oh I baked a dump cake and lost my mine and mixed up the boxed cake.duh..Baked it anyway and only the corners baked..Put foil over it and baked for 30 more minutes..nope the middle was not done.To much peach juice I guess.SO, I put it on stove top to cool..CAT decides she wants CAKE affraid Shocked    Dump cake after all.....

Norm, your supper looks fantastic! And there's no way to compare it to a store-bought.....

I went to the fish store this afternoon......least expensive was flounder @ $10/lb. All the fish is fresh so I figured one was as good as the next. The flounder did NOT disappoint. I just seasoned w/s&p, dusted with flour, seared in butter, turned once. Took it out of the pan, added a splash of white wine and a squeeze of lemon juice, let it reduce by at least half, swirled in a Tbsp. of butter and spooned it over. Couldn't have been better or fresher tasting ~ and a good as we've had in restaurants. The boiled potatoes 'called' to me (I was craving them and they were so, SO good). Even a certain someone else at the table ate a full serving of the potatoes.

Your shrimp etouffee looked delicious.

And Beth, flounder is one of my favorites. You used to see it in restaurants a lot more several years ago. When you [i]do[i] see it, it is often served stuffed with shrimp and crabmeat. Yours looked divine -- moist and flaky. Mmmm!

Freshwater fish are OK. My son and I used to go fishing a couple times a month at the lake when he was young, but I really enjoyed the fresh saltwater fish I had when I visited the West coast a few times.

There is something about the fresh 'just out of the sea' fish. Oh, sure, the Lake Erie perch we had in Ohio was fabulous....probably my favorite of all, but it upsets me that we now live within 2 hours of The Gulf of Mexico AND The Atlantic Ocean and the availability and cost of fresh fish is so expensive.

We did have the river shrimp that our nephew 'net caught' from the St. John's River, but, although it was free and tasted OK, well.....there's an electric power plant right on the river in the same area we were shrimping. Who knows what those little 'bottom feeders' were ingesting before being caught?

Dane just needs to find a new friend who owns a big boat and wrangle an invitation to go out on The Gulf a couple times a month. The cost of going on the commercial 'fishing trip' boats is expensive - $250 to $450 per trip.

When I was visiting in Cal. we took a fishing trip out on the Big Sur, caught some flat fish and cooked them within a few hours. Really good. Ate Mahi Mahi on the pier in Seattle and had a fish stew in a restaurant watching the sun set over the Pacific at Pismo Beach. Not only does the taste not travel as well, but neither does the view.

Sounds like you had a great trip Norm. That Big Sur is something else. We went there in august one year for the car show at Pebble Beach. Froze our butts off. I didn't know it could be so cold in the summer. Funny though, 10 miles inland and it is hot. We live less than 10 miles from the beach and there are no fresh fish places around. All there is are grocery stores with questionable offerings. There is an Asian market a few miles away that has some tanks full of live fish, lobster and crab, clams and what not. Limited selection though. I remember one year my husband's boss took his boat up to Alaska. He over-knighted fresh caught halibut down to us. Best I ever had and I don't really like fish. He did the same with salmon and tuna.

The shrimp etouffee does look great.  All this seafood talk is just right for today.  Bass season opens today, and my fishing sons are out on Lake Erie since probably 6:00A.M. I will have fresh bass for my dinner tonight.  Yumm!

Potatoes are cooking for me to take potato salad for the fishermen to have tonight with their fresh fish also.

When we were up there we went to a private party at the aquarium. It was so nice to wander around with no crowds.

I forgot to say we stayed at this place in Big Sur called the Ripplewood. It was a bunch of old cabins that must have been there from the hippie days. Fortunately it had a heater and a fireplace because it was freezing in august. We had dinner at a restaurant called Nepenthe. Another place from the past with a magnificent view down the coast. My sisters have always gone there in style. They stay at these resorts that have private hot tubs. 20 years ago it was $800/night. No telling what it is now.

I can't remember the names of the restaurants where we ate but they told us that Clint Eastwood was part owner of one of them.

I'm super stressed tonight. I have to turn myself in for a 'sleep study'.....hooked up to a zillion wires to check my vital signs......

"zap" !!!!!!!

I know in my head it's no big deal. Billions of people do this to find out if they have sleep apnea. But I HATE doctors and tests ~ it's just not my idea of a fun time.

I know I'll be fine. But I don't want to wait the 2 weeks for the results and then continue when they decide I need a c-pap machine to sleep at night.

Oh, don't get me wrong......I'd love to go to bed and actually sleep. I just don't think I can sleep with a mask over my face. My claustrophobia makes me a nervous wreck even thinking about it. What can I say? It's one of my best phobias and I've really perfected it!

But, I'll go. I'll let them wire me up. I'll go to sleep and probably die in the night........

Where do you sleep? In your own bed??? I would hope so!!!
Do they come to your house? Please say yes!

Did they check your thyroid? Over active can cause sleep problems.

Did you ever take warm milk and honey b-4 bed time?? Or a hot cocoa?
Mom had to do that faithfully every night.

Do get the test, but don't let them hook you to those pap machines.

Oh poor Beth! Feel so bad for you. We will pray all goes well.
