I've been running around all day getting everything done so I don't have to do anything when the kids are here....no time to eat.

Ohhhh, that looks good. Love the way it puffs & then flattens out. I use to buy them at The Original Pancake House when they came out in the '60's. The one covered in powdered sugar and they gave you lemon wedges to squeeze on. Yum.

Granddaughter & I made some Apple Roses today ~ they're in the oven now. She loved making them.

Leftover spinach and chorizo - frittatta

Artichoke & Feta Frittata:

6 eggs
1 onion, chopped
1 garlic clove, minced
1 can artichoke hearts in water, drained and sliced in half
handful of sundried or semi-dried tomatoes, chopped
handful of fresh parsley, chopped
6 oz. container of feta cheese
salt & pepper

Mix all ingredients together in a bowl and season with salt and pepper.

Pour into a 9" greased pie plate or quiche dish and bake for approximately 30 minutes in a 350F oven until set.

Let cool 15 minutes before serving.

another healthy breakfast / brunch.

When the kids were here at Easter I made something similar in muffin tins. They were like a 'hand-held-breakfast-on-the-go' treat.

I totally forgot that I have a waffle iron. Found it today while looking for something else. I think waffles are on my breakfast menu for tomorrow.

I made a vegetable/cream cheese omelete w/taco sauce for our brunch. His had cheddar jack cheese instead of cream cheese. I purposely did not make any toast or (what I was craving...) English Muffin to go with it. Really trying to have a few days of low, low carb meals.

I'm making a version of Barb's butternut squash soup for our lunch. I don't have an orange so I'll eliminate the zest....but I did add some freshly grated nutmeg and some ground ginger, thinking that was a good pairing with the squash. Oh, and I shook a couple times with the cayenne pepper shaker.

I've got sunflower seeds so they will have to take the place of her pepitas - not making a special trip for those.

Yours, too. I'm thinking maybe I should just make a vegetable - vegetable soup. I can use up anything leftover in the fridge. Maybe I'll add a can of beans.

Yeah, you got me thinkin' on that one......if not this week, then next!
