Only clue I have....is thinking of Waffles.
I may cook them soft and partially tonight, and then tomorrow, just heat them up back on the waffle iron. Hmmm??? Gotta try that...

Of course some breakfast sausages to have; to dip into the syrup.

I made a ham sandwich....spent the morning at Lyn's. She's doing amazing well after her knee replacement on Thursday. She's up & walking, was able to take a shower & change the dressing on the wound. She got to take a short shower because they closed her incision with super glue (well, that's what they called it....). The meds should wear off by tomorrow so we'll see if she's still relatively pain-free by tomorrow evening.

I had to have a leaky tire repaired at Sam's Club today, man, that takes FOREVER. I got there at 11:30 a.m. and they didn't get to it/get it repaired until 2:00 p.m. The tire shop was busy. I would have left, but no telling if the rest of the week would be any better and the kids are coming next Tuesday so I didn't want to have a soft tire when we want to use the car to go places.

I was going to skip lunch, but the smells of pizza, etc. was too enticing. I ended up with a huge Nathan's hot dog (mustard, onion & sauerkraut) and a drink for $1.82 ($1.70 + tax). No wonder all the old people go there for lunch! LOL I don't know how you could eat for less....even the big pizza slice w/drink is $2.50.

Butternut squash pancakes. So good lol. I was going to make them for lunch but could not wait ,besides I was so hungry..

Ohhh, looks good. You just reminded me I've got to get my zucchini mini muffins made for my grandchildren....they'll be here Tuesday and it's the #1 thing they ask for (#2 is cinnamon scones).

That looks interesting....what did you put in it? Sweet or savory? Doesn't look like a crust....hmmmm.

2 cups of cubed butternut squash (about 1 large butternut squash)
4 tbsp butter
3/4 cup sugar (((Stevia))
1/2 cup of flour
1 tsp baking powder
3 eggs
1 tsp cinnamon
pinch of salt
1/3 cup of golden raisins

In a large, heavy skillet, cook the butternut squash on low heat in the half stick of butter for about 15 minutes with lid on, until softened....(I already had 2cups leftover)

Remove to a bowl and mash until pureed.

Add in the rest of the ingredients and pour into a buttered Pyrex 9" pie plate.

Bake at 350F for 35-40 minutes until top is cracking and golden

Sounds just like a Southern sweet potato pie.....

I like the idea it doesn't need a crust.

Sweet Potato & Goat Cheese Egg Muffins: (makes 9 muffins)

1 cooked sweet potato (skin slips off easily when the potato is cold), diced

1/2 jar roasted peppers, chopped
4 eggs
1 tbsp milk or cream
salt & pepper
1/4 cup chopped parsley
1/4 cup feta

Mix all ingredients in a bowl, adding in the eggs last.

Bake 20 minutes..
