I ran around with Lyn & Barb most of the afternoon. We went out to lunch, then clothes shopping for them. Then it was back to Lyn's to prepare supper. Three cooks in the kitchen, too much laughter and way too much fun. We had a vertical roasted chicken, boiled potatoes, red beets, beet greens and we had stopped here to pick up the pineapple upside down cake for dessert.

Oh, and I also took the French Onion Stuffed Mushrooms (a success) and my leftover chicken appys from last night because Bill doesn't like mushrooms and I wanted to have an appetizer for him, too. Everyone said both were good and likely to be made again by all of us.

Potato flour is crispy and some say it is lighter than corn flour.  I've heard them referred to as coatings like corn chips and potato chips are different.

The chicken with potato flour was dark meat and marinated in soy sauce, sake, garlic and sugar so the flavor was a factor that makes it kind of hard to compare to butttermilk and flour.  Both were good.  The potato flour browned faster and I had to turn down the heat for the meat to finish cooking.

I use to go to a small restaurant that served Japanese / French food....I always thought it was an odd combination.

One of the chef's appetizers was chicken chunks marinated in soy and then lightly deep fried. I always thought it looked over cooked because of the soy making it dark but he just did a light coating of the corn flour and cooked in the fryer just until cooked through - always tender and not dried out. He served it on a bed of thinly shredded cabbage with a soy/ginger dipping sauce.

Tina made stuffed peppers. More rice to keep them soft. I didn't care for them soft, but I ate them. They were tasty, but """""""""""".
Tomorrow the carpet gets installed. yay!

THEN...all the stuff has to get put back.

Tina went to the butcher shop to get freash ground pork, and thin sliced eye round steaks.
Tonight she will make Pork Burgers and sliced fried potatoes. Ummm ... With Apple sauce.

Speaking of apple sauce...we have to make apple sauce again because I have like 8 quarts of apples in the cold garage.
The guy's from Carpet Doctor are here installing the carpeting and it's looking great. I am just sitting idol right now. Yay!..... Ooops! Time for another Aleve.

Not a good meal for my sickie feeling today.Don't feel like cooking.I did not even make the crust.Publix made it.
Had one slice,the rest will go in the freezer or DD can come get it.

Actually...Tina is making an apple pie as I write, and she made griddled cheese and tomato for us for lunch.
I'm cutting the door bottoms because the carpet is thick and the doors scrape the pile.
Now it's outside to blow leaves (again) , because it is gonna rain tomorrow.

Not what I planed but come late afternoon I wanted something easy... No fuss.

Tina picked up 1/4 lb of various lunchmeats, ( cold cuts) and some mini tacos.
I was next door installing a turbo charger on a VW car, and Tina brought some lunch over on a platter. It was very welcomed, and it tasted 10 times better than sitting at a table.

I came in after noon...and for supper I made cod fish steamed and poached with onions and tomato slices, in a pepper wine sauce. Spanish bag rice mix hit the spot too!

Now...we are unwinding a bit. I have kitty poopy box cleaning duty later, and whatever else has to get done.

Barb, your meals look wonderful....I didn't starve even though I couldn't get on my computer. Oh, and after I made two posts here once I got my mouse replaced.....

MY KEYBOARD STOPPED WORKING !!!

AAaaaaarrrrrrgggggghhhhh! I am NOT a computer geek. I don't troubleshoot well. I just get angry. And you can guess how far I get by getting angry when I'm the only one here. Well, we went to lunch and I asked Lyn & Barb about my problem. I had changed the batteries in the keyboard, did a shutdown to maybe let everything reset itself....hit it with a pencil REALLLY hard.....still didn't work.

So, Lyn stopped. I decided maybe to double check the batteries. Sure enough ~ DUMMY ME had them in backwards. What an idiot. Well, I'm back to working now, although my sound still isn't working. It doesn't bother me not to have sound. I'll figure it out some other time.

But, anyway, here's what I had Friday night. Breaded/baked pork steak, spaghetti squash, steamed spinach & a cream biscuit.

No supper here yet. Just processing 9 quarts of applesauce.
We eat applesauce with pork ..... Yummm!!!

I guess we will have cold cuts sandwiches tonight.
I'll have some pork fried rice from the other day.

Yesterday I made cheese fondue for lunch. For dinner Cassie made stuffed acorn squash and Charlie made Bahn Mi sandwiches.

Sounds good, Norm ~ it must be acorn squash season.....

Barb and I cooked over at Lyn's tonight....a FEAST, to be sure. It's great fun to have another cooking friend moving into the area. I'm stuffed and probably shouldn't eat again for days. But my sister-in-law is coming tomorrow for a few days so we'll eat, to be sure! So much for THAT plan of action.

Lyn wanted to have steak and lobster (we had both in our freezers). So, we ended up with steak/lobster, baked potatoes, baked acorn squash, green beans & a tossed salad. We were all moaning at the end of the meal. After we cleaned up the kitchen Lyn said she had ice cream for dessert but I just excused myself and drove home. I think one more bite and I would have exploded!

and today I cooked this chicken rice I have been craved since 2 weeks ago.. I bought a fresh whole chicken, I boiled it in lots of water, seasoned with fish sauce, ginger and sesame oil and black pepper + salt.. then I cooked the rice with the chicken broth..

Barb, that is so weird that we both made stuffed cabbage on the same day. That seems to happen a lot around here, huh? They were good and I made them in my new HUGE Le Creuset Dutch Oven. Love it!

I had egg salad on a soft toasted roll...

felt like d s today. Tired...listless???
I don't know?... had to take a nap too. conked out for an hour.

I had one of those days too, only I couldn't sleep. We are having bbq chicken pizzas made with Pillsbury Grands flaky biscuits as the dough.

We use those P-bury biscuits to make pizza too. Especially when we get a hankering for pizza at 1 am ... lol

I had to nap because I started to get the gag feeling. I hate that, because it makes me sick!
I'm ok now, and I am having a cup of Chinese tea to settle my stomach.
