Salmon Cakes
2 6oz cans wild salmon
2 teaspoons Old Bay seasoning
2 eggs
2 tablespoons mayonnaise
3/4 cup panko
1 small green pepper, finely chopped
2 tablespoons chopped fresh chives
light olive oil for frying

with Lemon Dill Sauce. aka mayo,splash of lemon, pinch of zest,dill.

Wow, Barb, those are beautiful.

Salmon (fresh, frozen or canned) is not on my favorites short list.

But I'm thinking if I got a larger cod filet than usual I might be able to make a "cod cake". I saw on DD&D where Maine Diner makes a salt cod cake with boiled potatoes. But I'm really wondering, now, about leftover mild cod (even if I froze the leftover cooked cod) if I couldn't do something like your salmon cakes with just a tiny bit of bread crumbs, if necessary, for binding.

Hmmmmm, gotta think on this one. As usual, the worst that will happen is I lose a little bit of ingredients ~ it's not exactly as if I'm going to starve to death with ONE lost meal! Thanks for the idea!

Tina doesn't like celery, and she's the fish cake maker. Sooooo... Noooo Celery!No

I went back and re-read the recipe.

I'm thinking I can make it as is for Dane and I'll just sub in some Mozarella cheese for mine.

Oh, and I love the avacado w/basalmic. So, SO good!

Jimmy had a slider that Tina picked me up in PA. Had some (3) Krispy Kreme Doughnuts, and 1/2 of a chicken salad sandwich. I made Tina her chicken salad.

Tina had a open faced hot ham and gravy sandwich from the diner.

Now I am full!

No celery for me. You know that is one thing that goes south in my veggie drawer. Every time I buy it.Only 79c but still.I very rarely even buy it.

Beth,, I buy fresh most of the time, salmon has TONS of Omega3.
I could eat it 3/4 times a week.When it is not on sale & I want some(or need) I buy wild alaska in the can..

I bake them too. Like a crab cake.
I am so spoiled with fresh fish, canned is soooooooo canned..

fresh tuna is so not like canned lol.

I made some changes in the recipe. I cut the chicken breasts in half vertically to make them thinner and cook faster and I reduced the amount of mustard by half. The Dijon they had at Trader Joe's was kind of strong. It almost tasted like horseradish. As I was cooking the breasts, I cut then in half across to make sure they were cooked through. I used some left over grated Mexican blend and some cave aged cheddar.

Those salmon cakes look divine, Barbara! My mom used to make canned salmon in a tomato sauce, which I loved. She made codfish cakes (we always called them "codfish balls" until we got older and knew better!).

A friend spent the night with us recently with her dog and she had canned salmon for the dog to eat. She couldn't believe that I eaten canned salmon as a child. Laughed and told her it's not dog food, for God's sake!

About how many "cakes" did you make with those ingredients, B? 4 to 6?

I had leftover Faux Quiche in Spaghetti Squash Crust rewarmed (microwaved on a defrost setting for 3 minutes a couple times until warmed through).

To make it a bit different tasting I put some taco sauce (Old El Paso hot) on top and had a nice spoonful of sour cream on the side.

We had kielbasi with potatoes braised with onions for a few hours.

I cut the grass because after the 1.2" of rain...it sprouted like the bean plant in "Jack & the Beanstalk!"

Dessert was a coconut cookie...and a Krispy Kreme Glazed doughnut.

I almost picked up a rutabaga to cook & mash but knew I'd only want 1 meal with it and it was huge (they ALL are....) so I skipped it.

yes Jimmy. Love italian beans..even the canned ones.I don't think I have ever seen them fresh.In fact I had to ask Publix to carry them. Now they do..

Gosh, Imelda, I can't tell you how you have me yearning for a small container garden. I've got plans in my head but don't want to do anything right now because I'll be going back to Ohio in June. But maybe when I return and the weather starts to get a little cooler I'll be able to plant some lettuces along with herbs.

I'll bet there is someone very happy you're back home and cooking for him again!

It's funny how things stick in your head....

Barb and I both made Taco Salad the same day last week (or was it just earlier this week?)...BIG difference was, Barb had avacado on her's. I've been hungry for ANOTHER taco salad ever since I saw her's.

So, I rummaged in the freezer and found another zip bag of taco meat to thaw and here's tonight's Taco Salad that satisfied my tongue and is now off my mind:

I even mixed up a salad dressing of sorts for the lettuce ~ I remembered from years ago when our girls would mix Russian Salad Dressing and Taco Sauce for a spicy/sweet dressing. I used WAY less than they did! lol

And it's a strange thing. I thought I'd really, REALLY miss the crunched up tortilla chips under the salad to mix in as I ate or one of those purchased taco bowls to put everything in and break apart to eat with the salad ~ but it's been pretty good for the last month eating something like this without the added carbs. Thanks for the encouragement, Barb!

Now, as for the avacado ~ I'm NOT skipping that ever again! lol

I got the glasses about 25 years ago even though I have always passed the vision test for driving.. even this year. But as an art teacher I noticed things were not as clear as they used to be and in the last several years I have really needed them for reading.
