"Dinner Tonight. I haven’t been doing much cooking lately, but did today.
Pork tenderloin wrapped in a bit of bacon, then finished with some sweet Thai chili sauce. Basmati rice with red pepper, mushrooms, onions and a chopped jalapeño for a kick. Some heritage colourful steamed carrot sticks! Yum. There’s leftovers for tomorrow."

Tina already made lunch. She made Minestra and beans. Supper will be burgers.
I think we have Greek style burger and hot dog chili in the freezer. I just need to mince some
onions.

HE is still eating eggs..... (( sigh ))

So that means I will be having ( UGH ! ) leftovers for my supper.

YUCK ! TO LEFTOVERS...... What gets me with the leftovers deal, is I won't eat them, but yet, Tina will save it till it winds up in the penicillin factory; way way back in the Bowels of the refrigerators' peeves me off to no end!.....
Now tonight, she wants spaghetti with meat sauce. She's on her way back from Bethlehem, PA . She and her cousin hit the casino and she won $424.00. Good for her.

I had some oral surgery so I prepared stuff Steve asked for before I went. He asked for creamy roasted red pepper soup with bread for dunking. He’s enjoying it now

"Dinner Tonight. I had no idea what to make, wasn’t very hungry because I had a hot sausage on a bun for a late lunch. Then son called, did I want to meet them at a new restaurant, and of course I went. Had a fabulous appetizer of a grilled calamari ‘steak’ with a basil pesto, some mixed greens and tiny tomatoes. It was fabulous. I have made calamari steaks a few times since I’ve been able to get them at Costco. The only other time I’ve had them in a restaurant was when I was in Paris with my sister years ago."

Just finished frying bacon for tomorrows breakfast.... BELGIAN WAFFLES... Yep!
I just bought this for Tina for her birthday on the 23rd.
We had 4 el cheapo Belgian waffle makers, but they all had broken or burnt up electrically.
The new machine is from a restaurant supply. It's much better built, and hopefully it will last.

HE fixed his eggs......again

So, I used what I had in the refrigerator to make the Mediterranean salad ~ used some of the rotisserie chicken.

I'm getting tired of that salad ~ I think I'll retire it.

Had the waffles for supper, and now I am sick to my stomach.
I buttered the waffle, and filled the little cubes with syrup.
I proceeded to pour the batter for another waffle, and I turned to eat mine, and low and behold,
there was no more syrup in my waffle. It looked like it soaked it up like a sponge.
I then filled the little squares with more syrup...... OMG.... I got so sick, I didn't want any more.
Oooof..... Yuck ! I don't want to see a waffle for a long long time. *burp*!

Aw, man, Jimmy! And you were SO looking forward to using Ms. Tina's wonderful birthday present......

I'm so sorry things didn't go as you planned.

Maybe you need to make the waffles & freeze ~ then toast in the oven and they'll be crispy and not so moist.......

Just a thought...

I think it was the syrup.
I added too much, and my blood sugar went crazy. My type 2 diabetes.The waffles were great, and nice and crispy.

So far, we will have the Bolognaise sauce I made early this morning, over elbow macaroni.
Tina bought a rotisserie chicken at Costco's. She made soup, and chicken salad with it.
I wil NOT eat that........... Period. The chicken had no salt or spices. It is bland ( as she said ).

HE was having eggs...........  ((  again.....  ))

I didn't feel like making anything for myself so I went to Publix and picked up 3 fried chicken wings from the deli and a package of frozen sweet potato fries.

DD#1 gave me a hint that when she makes frozen sweet potato fries she starts them in a cold oven and puts it on convection.  So that's what I did ~ spread the frozen potatoes on a little rack over a foil lined pan and put them in the cold toaster oven set to 450° Convection.  I let them go for 15+ minutes after the oven beeped it was at temperature.  They came out nice and crispy.  

About 5 minutes before the fries were done I added the fried chicken wings to the oven on a piece of foil ~ just to crisp it up and reheat it.  An obscene amount of oil drained off the 3 little wings ~ but they came out nice and hot and crispy and really tasty.

All in all, it was just what I was hungry for......and so little effort to get it on my plate!

"Dinner Tonight. Small top round steak, new baby Yukon gold potatoes and a red and orange heirloom carrot. I volunteer both Friday and Saturday afternoon so I’m trying to put something in my oven to be almost ready when I come home. Meat was over cooked, but ok. I had used a package of onion soup in the dish, put everything in a ovenproof dish, covered with foil and the oven turned on at 4:00 I love my oven!"

"Dinner Tonight. Thought I didn’t want to ‘do much’ tonight. But I had some garlic shrimp in the freezer, some snow crab that I bought two days ago, both of which neede to be used before they end up in the trash. So shrimp went into the oven with a Hot Dog roll which became garlic bread. Salad of greens, onion and tomato as a base. Nice dinner!"

Fried Cabbage and bowtie macaroni...... chicken soup, and blueberry pie that Tina made this morning.
DD brought cheese from the local sheep farm, and apple cider doughnuts from the next farm over in Long Valley NJ

OK, so I did something tonight I don't think I've EVER done before......

I made Haluski for one ~ well, one and a little 8 oz. container leftover for a lunch later in the week.

And what's irritating is it took just as much time to cook a small amount as it takes to make a huge cast iron skillet full.

But, it was my supper.

HE had a cheese omelette he made for himself ~ managed to get a dinner plate STUCK inside the top edge of my favorite non-stick skillet when he was attempting to flip the 'egg saucer' to cook the second side.

Somehow, between HIM pounding the skillet on a cutting board and me running cool water over the bottom of the hot skillet and then HIM pounding on the bottom of the stuck plate ~ it finally let loose. And he was able to just reheat the eggs with his sliced cheese on top to end up with his omelette.

Cookin Lore



No cooking last night for me, but I ate well. I was sitting in our lobby to sell tickets for our food truck picnic coming up on Saturday. In our party room just down the hall from the lobby, there was a 100th, b-day party going on. They obviously had too much food, and brought over a plate of chicken; penne pasta with meatballs/sauce, cauliflower, red pepper, potatoes and a salad! YUMMY!
