Well, that's certainly a 'high end' breakfast...... hard to think of lobster as 'leftover'! LOL

If I had been there you might not have had a chance to get it before I snatched it right off your plate! I would have licked the hollandaise right off the plate, too. Hahahahaha

We're meeting Lyn & Bill for lunch at 'The Lighthouse Restaurant' today. Since Robin is only here until Friday morning we try to fit everything into those few days. Tomorrow will be a whirlwind.....we'll drive the 1 1/4 hour to his sister's and have lunch in town, then head for the beach for the afternoon with most of the rest of the family. Robin is hoping her cousin will be able to meet us for a light supper in St. Augustine after the beach......I should probably take a pillow in the car for my nap on the drive home ~ I'll be exhausted after spending the afternoon by the water.

I made a salad for lunch with avocado, tomatoes, bacon, lobster and blue cheese. Lobster was kind of over powered by the other ingredients. It was an Ina recipe.

I don't get when she adds something as powerful tasting as blue cheese to something as delicate and sweet as lobster or shrimp.....of course, I wouldn't put blue cheese on ANYTHING ~ LOL

She seems to think everyone likes the flavor of strong cheeses, whether blue, goat or sharp cheddar. I also think she over does the total amount of salt in her recipes. So, when I make something out of one of her cookbooks I usually reduce the salt to what I'm comfortable with.

Your salad really looks delicious, Norm, but I've got to agree that lobster in it seems kind of out of place. I think scallops would be a better choice but I might still change the cheese to something a bit milder than the blue even with the scallops. I'd love to have a forkful now to help me make up my mind! Laughing

Cable went out in the house this morning about 1:30 a.m. (I'm a problem sleeper, as some of you might remember). When I called, I found out it was a neighborhood problem and they hoped to have cable restored by 6 a.m. So around 2 a.m., I tried to go to sleep and was successful. Woke up right before 6 a.m. and cable was still out. Phoned again and they said neighborhood was back up. Both upstairs TVs (which have no cable boxes, just plugged into the cable outlet in the wall, which they now have hooked up to what they call "mini-boxes" for which they charge us $3/month per mini-box!!) had no cable.

Brian went downstairs to get coffee for us and hollered up that cable was working downstairs on the two TVs with cable boxes. So I went downstairs to have coffee this morning. Since I was down and had some time (salesman was coming to give us a bid on installing a whole house generator at 11 a.m.) I decided to make some scones for breakfast.

I made cranberry orange scones, which came out great. Brian was tickled pink, as I had ordered some Sparkling White Sugar from King Arthur so I used it this morning on the scones I made this morning. He had asked about that type of sugar on the scones he was picking up and bringing to me when I was in the hospital, so it was fun to surprise him with it today. He also made me laugh, as he told me my BIL asked about that sugar the last time he was over and he explained to him what it was; the package had just been delivered and evidently Ed looked thru the box of stuff I ordered from KA (he cooks, too, and he's nosy, which I knew already so it didn't matter).

This type of sugar would be super on top of some pie crusts, too -- like a cherry pie, which I'm planning to make really soon!

I know -- even if it was just for looks, it would be fun using it. Sure made my scones look pretty. I also brushed an egg wash on them this time to brown them up better without waiting for the oven to do it. So they really looked pretty in their fancy sugar!

Heck, I'd buy them if I could find any decent ones. Only ones I can find to buy are icky tasting.

You might remember I'm nuts for lemons lately and wanted you to know lemon scones were the first ones I made -- BEFORE you gave me the tip about grating the unsalted butter when it's frozen! I was exhausted (grin) but they came out good enough to keep me going on scones. Plus I made a little lemon glaze for them like you do, with some lemon juice and confectioners sugar, instead of the recipe's glaze. Last time I made them (Brian now grates the frozen butter for me!), we had them with lemon curd. Mmm -- I just love that stuff.

Brian usually makes me something for breakfast these days -- I know, I'm lucky and I now have 3 prescription medications I have to take in the morning, something new for me; he wants me to have something in my tummy besides coffee -- and today he warmed up some lemon pound cake he bought at the store yesterday in a pan on the stove in some butter -- and put some lemon curd on the side for me. Talk about good!

I'm so into lemon flavor lately that I'm wondering if I have some type of vitamin deficiency -- must be my LEMON GLAND!!!

Hey, Beth, when Dane's out of town on his trip to your old homestead, you should try that lemon chicken recipe I sent you; the lemon sauce is delicious and the chicken, browned in cast iron on the stove and finished in the oven, is nice and crispy. I'd love to know if you liked it as much as we did...
