I held back on some of the salad from last night's Oriental Chicken Salad, as well as some of the cooked chicken. I knew from looking at it in the bowl that I had too much for the two of us for one meal.

So, my lunch today was a repeat....a smaller version, but the same. And it was just as good the second time around!

Darn, but it's upsetting when your meal doesn't come out of the pan looking good enough to take a pic of......today's breakfast ended up looking like something Barb's girls would turn their noses up at ~

I used the leftover braised potatoes, onions & peppers to make a hash that I then cooked a couple eggs on top of. I should have taken the pic IN the pan, cause it looked just fine, then. But, you know how it goes, you get in a bit of a hurry.....the egg yolk breaks, the hash scatters on the plate.

Well, close your eyes and picture a lovely plate of soft-cooked eggs on a bed of potato hash.

It was yummy......just not all that pretty! LOL

  • 1 cup milk
  • 3 tablespoons butter
  • 1 egg
  • ½ teaspoon salt
  • 2 teaspoons sugar
  • 3 cups all-purpose flour
  • 1½ teaspoons dry yeast (I recommend Red Star Yeast)
  • cornmeal

Very nice. I've never made English Muffins....I know Jimmy has.

He uses his electric fry pan. What did you use? The color is perfect!

I used one too.ha..My burners run hot.Last time I made them on a CI skillet and they dang near burned up..So fast and easy . I love my breadmaker..

I no longer have an electric skillet. I wonder if my electric panini/griddle thingy would work???

I know it makes OK pancakes, just not sure about the surface temperature and how accurate it might be. Wish I had one of those point-and-tell surface thermometers.

I'll say perfect too Beth.

Barbs muffins look like they were baked at the right temp.

I cooked mine in rings at 350 the first time, and they scorched. Next 4 from the batch I dropped to about 290 ....

Back from Dr for stress test....came out ok...so celebrated with a
egg, bacon, and thin slice of pepper jack cheese on a toasted English Muffin.

Now, all I have to do is.... LOSE WEIGHT! ....

I want Beth lunch. And tomorrow is my doctor day. I'm sure it will not be good!!!! I want a muscle relaxer for my back!!!

I hear ya on the Dr day... If it wasn't for the meds refills, I wouldn't go.

It's all a money making scheme. Feed the Money$ to the drug company's.

Last visit 3 weeks ago...I got a script for 90 oxycodone and acetamenaphine (sp?)
for my sciatic pain if it flares up. They are always good to have on hand.

Me too.I have all but stopped going.I dropped my specialist,she started charging me $180 for a fast 10 minute visit that she did nothing.Tech weighed and took blood and took BP and did a AIC..

I paid $40. at new GP. Plus my refills ran out from old doc and I need cheakup for new scripts.


My insulin went from $12, to now $40.. Rolling Eyes Rolling Eyes

Talking about drug costs, I saw where a drug they have that virtually cures Hep C, costs something outrageous, like $60,000 for 12 weeks. People's insurance's refuse to pay for it until people have damage or cancer in their livers. That makes as much sense as a football bat. Insurance companies should all be nonprofit.

What makes me mad...Is nexium was only by dr note to order. For years I payed for it because my plan would not cover that drug.
NOW ...you can buy it over the counter.

Tina made a soup with shredded cabbage, carrots , romain lettuce, kale, beans, corn, and little meatballs. It was good. I had two small slices of Italian bread with butter to dunk in my soup. That is all I had all day. I feel lighter. I look fatter! LOL I can't win!

This put me in the mood to cook on a fire. Something! I don't know what, but surely hot dogs on a stick over the fire, and baked potatoes cooked on the hot coals. ummmm!
