I thought my mother was the only person to eat green onions with a meal. She loved eating them with butterbeans and ham hocks and cornbread.

We've always called them Scallions. Usually I will eat them with a cold sandwich.
I especially love them with a liverwurst sandwich.

Sometimes I will wet them, and salt them good. Then fold the greens to fit them in a slice of white american bread folded in half. Scallion sandwiches! Ummmm.

I love a burger fried with the green part cut like 2 inches long, fried to wilt them, and piled high on the burger.

I think need some inspiration and help from you.  I do not know what To make for supper on Wednesday. I defrosted a large boneless skinless chicken breast. I have baby bell peppers, celery, radishes, Campari tomatoes. (Small large tomatoes), frozen chopped onion, frozen minced garlic, a sweet potato, and a white potato in the house.  I have grated Parm and Romano cheese and a block of Cracker Barrel. Trying to think of something easy,fairly quick to make for supper. I also have non perishables cooking supplies here also.  Also grated cheese and cracker barrel cheese.

Any ideas?  The cooking part of my brain has not worked for a long time.  I do not fe like running to the store for an item. But I guess I could, if need be...   Nothing spicey.

Bake the chicken breast in the oven, make a veggie stirfry/ratatouille type of dish with the veggies.

I could see chicken cacciatori .... breast 1/4'd bell pepper...tomatoes ....pepper, and onions.
No garlic. Add the two potatoes quartered at the last 45 minutes of cooking.
Don't forget a drizzle of olive oil at the end.
Could even have it served over white rice. A shake of Romano cheese, and you're good to go.

It would be good even served over rice.

I haven't decided what to make for dinner yet. I just got through going crazy online at a Tommy Bahama outlet sale. I bought a lot of things for my DH. Got some shirts for $21.95. That man can wear short sleeve shirts and shorts year round. Roomie wears tanks year round. Me? I put five layers of clothing on in the winter and am still freezing.

Pork tenderloins were on at $2.99/lb. so I bought 4, have one in the oven for tonight, and enough left for tomorrow also.  Gonna make some couscous with veggies in it too.

I decided to do a combination of your suggestions! I am sautéing some fresh tomato, baby bell peppers, yellow squash, some of the frozen onions, and a clove of the frozen garlic. I added some S & P, some of Penzey's Tuscan Sunset herb mix.

I also marinated the chicken breast in the same spice mix, it is in the oven now...

Hopefully, I am not ging to dry out the breast! I usually do, that is why I prefer chicken thighs, but I had this in the freezer.

I am going to put the veggie mix over brown rice.

I am wishing this comes out good. I have not cooked for a while.
You know, I think I lost my touch....

Thanks for the ideas.... I would never have thought of putting cut up tomatoes in it.. so this is new for me...


Follow Up:

I covered the veggies in the frying pan while I was cooking the chicken. It came out soo good!! so sweet--I guess the tomatoes did that!

Are those figs? I can't eat them fresh. Too many bad memories of a fig tree we had in our yard. It was full of fruit and ants that were after the rotting fruit. I felt like I was eating an animal's testicle. BLECH! I do love Fig Newton's though.

Supper was a tomato pickers sammich.
Sliced tomatoes on toasted white with huge lathers of mayonnaise.

Tina made macaroni salad. I ate too much!

Tina and Gabe had Tilapia fish. Breaded.

Dinner tonight was chicken breasts in a cream sauce, green beans, okra, salad and rice. Charlie put some okra in his salad. I guess they were a substitute for croutons.

Looks good Norm. Okra? I love okra in soups or in stew. Actually. I / we have never had it fried. Any tricks to frying it. BTW we only had the frozen okra.

I am not sure if you can fry frozen okra. Two ways to fry it are 1. to deep fry it in a batter or 2, which is what I did is to bread it with salt, corn meal and flour, shake off the excess and cook it in a thin layer of oil in a skillet until it is crisp. It takes some experience to do it that way because it can go from under cooked to over cooked in a couple of seconds.

So a good start would be obtaining Fresh Okra. Hmmm. Tina said, she never sees it in our stores here.


I remembered as a kid... we would open a can of vegetable soup, and heat it.
As we ate it, I would see those little seeds from the okra in the soup, and we asked mom what they were. She said,"Those are just little baby beans!"
I don't know if she just said that so we kids wouldn't complain, or if possibly, she didn't know what it was. Just the word "OKRA".... would make a kid think twice about eating it! LOL

I had never seen fresh okra sold in any grocery stores before this year. This summer is the first time I ever saw it in any store and only one store this year. Before I could only get it at farm stands or from someone growing it in their garden.
