1German pork recipe? Empty German pork recipe? Mon Feb 09, 2015 7:22 pm

My sis was in Germany last year and said that in some restaurant they had "Schweinehalz" or Pork Neck on the menu and it was sooo good. I looked at a German cooking website and didn't find anything.

There is a Polish deli near where I live where they sell what they call pork neck bones. My first thought is get the neck bones, throw them in a Dutch oven with sauerkraut and what have you got to lose???? Any other ideas, anyone???

I remember when I was a child, living on the farm with my parents and three brothers....it was a tough year, financially ~ poor crops, weather, whatever, and we had the 'summer of neck bones'. Mom cooked neck bones and we had them with sauerkraut, braised and then on the grill, in soup, and just about any cooking method she could think of.

When it's the only meat you have you can get pretty tired of them.

I just remember how many bones there were.....everyone had a pile left on their plate at the end of the meal.

Here in The Villages a number of the restaurants have a pork shank special ~ sometimes they call it Osso Buco, although I think that is traditionally veal. It's a braised pork shank in a rich gravy and it's really tasty.

So, after you try the sauerkraut one, then give a braise a try with a good red wine and some mushrooms and other vegetables. They have got to be fairly inexpensive, aren't they?

Thanks, I found another German cooking website that has 15 recipes for it. I will look at them more closely tomorrow.
