I was watching The Chew the other day and Mario made this chile that looked good.  However, it used A-LOT of ingredients and most of them I didn't have.  So I revisited the recipe and used ingredients I had available.  It came out really good.  If you want to make it, here's the recipe:

I happened to have hominy in the fridge, which he used, too.  If you don't and don't want to run to the store, just use white beans.

Looks really good, Jana! Hominy isn't something I normally have in my pantry but, as you suggest, white beans are.

My husband loves omelets and wanted something as a filling.  I used this pork chile as the filling for his omelet. He loved it.  It's a great way to use leftovers.
