Dinner tonight was chicken parmesan over spaghetti and tomato sauce, eggplant, okra and peaches.

grilled nice big rib eye.Have no clue why I did a no account potato.It didn't even taste good,kindof bland & nothing.I didn't even eat it..I gave it to maggie.

The 10 yr. old got home from his Dad's just in time for supper. I made chicken fingers...one big boneless chicken breast, cut into planks, buttermilk/siracha and panko, pan fried in evoo, boiled potatoes and Penzey seasoned green beans. It always amazes me I can stretch one chicken breast into a meal for four like that. It was just enough without anyone going away hungry or being too full.

     you guys make me laugh. 

I had a nice chuck roast I had planned to roast with potatoes, carrots & onions.....pure comfort food, for sure.  When I mentioned it to DD she asked for the Italian beef sandwiches instead.  Well, OK...that means all I have to do is dump it into the crock pot first thing in the morning, add 1/2 c. water, mix together the dry seasoning mixes (Italian dressing, Ranch dressing, Browon gravy) and let it cook for the whole day.  This afternoon I pulled it out, shredded it with two forks and added some of the cooking liquid.  I reheated the meat, toasted sub buns, melted mozzarella cheese on top and topped the whole she-bang with the moist shredded beef.

No one complained, no one said they were still hungry for a second sandwich and supper was done.  Oh, I did have a nice cold, crisp salad and some chips along side.  Love that recipe.  So easy - no work at all.

I've used that pot roast recipe several time too. It is good and it's easy.

Looks too good to eat BARB...like a picture on the wall.

Those panko crumbs are great. We never heard of them until maybe 2 years ago or so!

Love the look of your meal, barb. I just may have to do a variation tonight....love the roasted potatoes with the melted Parmesan...makes 'em seem so much more special.

Mr. Amazing wanted another Italian Beef sandwich for his supper. I had two hot dogs grilled outside with Rudy's Coney Island sauce, onions and mustard. DD and GS are eating later and planning on a frozen pizza. GS will be happy with that!

You know, Jimmy, you could probably live VERY comfortably IF ONLY you got paid for the Mr. Handy Hubby Service you provide for the neighborhood.  Then you could afford more than one itsy bitsy sandwich to split for two for your supper.....

But I know there is no way you would accept $$ for your work.  I'll bet your neighbors just think:

My Pay....is the ability to help them. It's a feeling that dollars cannot provide.

BTW.... We had a corned beef sandwich with mustard for bedtime snack.

Agreed, Jimmy. Projects and problem solving keep the mind sharp...and it's such a good feeling to know you have been of service to someone who's talents do not include the solution to their particular problem. I may not be able to repair my car but I can stitch up a tear in your shirt or fix a meal without breaking a sweat. It's always rewarding to share what few talents we have.

I wish my explorer would fall apart. No joke.It just happens to be the best auto I ever owned.Nothing I mean nothing ever craps out.Well the battery did. 

I want ,,NOT need ,,a newer one. Not a new one ,I do not want all the electronics on it.I don't need a dashboard that look s like a cop pit of a jumbo liner..

But this suv just keeps on ticking..so I have no reason to get something else.

My DS got his dads 2009 Ford pickup ,after he died ,,wow that thing is all decked out & nice.Then he had to drive from MD back to Ca.Well worth it.
