I need to make an appetizer to take to a Patio Party tomorrow and I got it into my head to make French Onion Stuffed Mushrooms....but I've never made these before and just have the process in my mind.
This morning I'm caramelizing 5 lbs. of yellow onions - if I'm going to make them I figure I might as well make enough to freeze some so I have them available for another meal or two.
I'm thinking of mixing a few Panko crumbs in with the onions and filling the mushrooms, then adding a small cube of mozzarella cheese. I can't decide if I should pre-cook my mushrooms "upside-down" to release some of the juices since the onions are already completely cooked down and all I really would need to do is reheat & melt the cheese.
