I was wracking my brain for a savory something to take to the cookout tonight....low and behold, I opened the drawer in the refrigerator and saw a package of crimini mushrooms staring back at me !
STUFFED MUSHROOMS !
I gave them a rinse and pulled the stems...on to some paper towels to dry and stay fresh until tonight when I'll stuff them. I chopped 3 slices of bacon and crisped it and removed it from the pan. I poured off most of the bacon fat, but reserved if I needed a bit, and then cooked some minced onion and the chopped mushroom stems - oh, and I added a good 1/2 tsp. of red pepper flakes, and cooked in the bacon fat until nice and soft.
When the filling is cool I'll mix it with some of the bacon and some cream cheese and fill the mushroom caps. I'll put some of the reserved bacon on top. Then, at the cookout, the stuffed mushrooms in a disposable foil pan will go on the top grill rack to cook the mushrooms and melt the filling....
Never tried this before but it sounds like it will work.....heck, if you can't experiment on extended family then what good are they?
