Cyn, I don't have the recipe in my files ~ I usually refer to my old tattered Better Homes & Gardens cookbook for the recipe.
But it's cut pork (you can use boneless loin chops if you want really easy), vegetables (carrots, celery, red pepper, onion), pineapple tidbits and a sauce of the pineapple juice, chicken stock, cider vinegar and cornstarch.
This isn't a "traditional" Chinese dish but rather what we all got in the 1960's when anything served over rice was called "Chinese Food". lol
