We recently had a tater tot nacho appetizer at a local restaurant and it was really good.  I thought that there were a few things I didn't love about it (like the tots got soggy) so I made my own version at home and....no soggy tots.  

Here's the recipe.

Tater Tot Nachos
Serves 2-4

Cheese Sauce
1 Roasted red pepper
2 Chipotle in adobo
4 oz Cream cheese
3 oz Grated cheddar cheese
2-4 tbsp Milk
Salt and pepper to taste
Tots
1 lb tater tots, baked according to directions
1 cup Chili con carne OR Taco meat, drained of extra juices, warmed
Garnishes
¼ cup Pico de gallo salsa
3-4 Scallions, sliced thinly
Guacamole
Sour Cream
Grated cheese

To prepare roasted red pepper chipotle cheese sauce, place 4 oz cream cheese and a few tablespoons of milk in a medium saucepan and stir until cream cheese is starting to melt.  Add cheddar and stir until melted.  Grind the roasted red pepper and chopotle in a food processor.  Stir into cheese mixture.  Add salt, pepper to taste.  Set aside.

Meanwhile, bake tater tots according to package directions.  When they are done, put you can start assembling the nachos.

First, put some of the cheese sauce on the bottom of the platter.  Depending upon how long the cheese sauce has been sitting, you may need to heat it up a little.  Place the tots on top of the cheese sauce.  

Sprinkle warmed chili or taco meat over tater tots.  Then dollop the remaining cheese sauce over the over tots.  Sprinkle scallions pico de gallo over the tots.  Top with a few dollops of sour cream and guacamole.  Serve while warm.

Note….if you prefer, you can try cheese whiz or velveeta instead of cream cheese and cheese mixture.  Just stir in the chipotle and red pepper mixture to melted cheese whiz or velveeta.

If you use taco meat, feel free to sprinkle some black beans over the tots when you sprinkle the taco meat on." />

We had a Guy Ferriti restaurant here in The Villages for a while (opened, didn't do really well, closed) and one of the appetizers was his 'Trash Can Nachos'. It was nacho chips layered with cheese and toppings in a tin can. The can was lifted off at the table and you ended up with a tower of nachos.

Since I'm not a fan of cheese it wouldn't be anything I'd order, but the idea of stacked nachos is something that would be fun to play around with for friends.

I love playing with food!

If you make mine, just leave the cheese sauce off and make it a dipping sauce. They’re good without the cheese sauce, too. I’d probably use more guacamole and pico to amp up the flavor

That's what I usually try to do to adjust to my tastes. But a lot of times I'll just make a dish like yours to take to a potluck. I just don't eat any.
