Yesterday I had an onion bagel with cream cheese, lox, capers and that seasoning we're addicted to on top, Simply Organic Citrus A'peel! Mmm, it was sooo good!

I didn't eat breakfast today, as time just got away from me. Planned to make a sandwich for a late lunch but time got away from me again and it was too close to supper time for me to have a sandwich. And I can't talk about supper here either. So something ELSE gets away from me!!!

I'm a mess today as you can see. But I have nice clean hair, the indoor plants are watered and fertilized, all the bills got paid and filed away (I usually pay them online as they come in but I got lazy lately so had a few to get to; several are set for "repeating payments" so they take care of themselves though I insist on checking on them each month for some reason), and I had a huge frozen Boston Market Chicken Pot Pie that Brian was kind enough to bake for me this evening. (I'm talking about supper anyway as you can see.) Those things are meant for two, I'm sure, but I am seriously addicted to them and eat a whole one myself! So it was good it was the only thing I ate today. Brian had an entire meal left over from last night -- he wanted to go to a nearby bar/restaurant where we know lots of the regulars and the owners and he ordered a hamburger steak with gravy, sweet potato fries, coleslaw and French Bread; he even asked for extra bread for his gravy. I almost always get seafood when I eat there but decided on a big juicy cheeseburger with regular ol' French fries. It was delicious and I ate every scrap of the huge burger and cleaned my plate. The evening was lovely so we ate at an outside table while talking to the owner's wife, a new friend and a couple of old friends. I watched Brian and he didn't take a single bite of his dinner -- not one. When I asked him what was the matter, he said he would eat "in a minute." He ended up packing the entire meal up and taking it home when we left -- he never had a bite! He said he just wasn't hungry all of a sudden. I should mention that his lack of appetite did not hurt his beer consumption, though, and I was glad he fell asleep quickly as he was kind of annoying when we got home! Laughing Just kind of annoying...

(I just remembered Brian made brownies today and there were some sitting on the bed in a sealed container a couple of feet away from me. I could hear them calling me so I took a break and ate two yummy fudgy brownies!)

The craving started last week when the kids were here.....no sense in grossing everyone out so I shoved the thought to the back of my head.

But today my craving came to fruition and even Mr. Amazing had no problem giving in!

Nothing wrong with that sandwich. Umm! only the Mustard would be minus for me, and the Miracle whip a minus for Tina.
Y E T !.... If the sandwich was just the meat on bread, it would be with mustard only for the both of us!

I made eggs over medium for us today! Cubes of Challah rolls to use as dippy spnges!
Bacon fried and precooked; and then heated in the micro for like 20 seconds to crisp it up!

I love to pre-cook bacon, like you, Jimmy. It just takes seconds between paper towels in the microwave to crisp it up and make it 'sandwich ready' (can you tell I'm thinking of a BLT about now?).

I also like to open a package of bacon and lay it flat on plastic wrap and freeze flat so I can take out just one or two slices at a time. There are so many times when I just need on piece of bacon to add just the right amount of smoky/salty flavor to a dish.

It must be catchy. I'm wishing for a blt now myself.
I remember ( that's a good thing ) that Norm in one of the forums, had mentioned how he cooks bacon in the oven. Straight and not curled up, and perfectly crispy through and through.

Yup....it takes a bit longer (I do mine on foil or parchment paper just so clean up is easier....sometimes I use a rack) but it doesn't spatter up all over the stovetop and is easy to make a lot at a time. I still crisp it up in the microwave just before serving because I like it crispy.

It was Shepherds Pie tonight. I helped chop onions and grate the cheddar cheese.
It came out great. I had three BIG serving spoons full.

Brian's the bacon cooker in the family and he still cooks it on the plastic bacon tray in the microwave covered with a paper towel. Comes out flat and crispy every time and he's got it down to a science now. The nice thing again is no splatter all over the stove.

I love to make candied bacon in the oven for a nice snack with cocktails. Mmm good as the soup commercial used to say.

The first time I tried making candied bacon, I made a large sheet tray of it.

IT IS EVIL !!!

I think I ended up eating every last piece as soon as it was cool enough. I have to force myself to stay away from that stuff. It's like my drug of choice!
