Thanks Barbara. The green beans were from Hy Vee and were awful. I had to throw half of them away and the rest were stringy and limp. I had to boil them for an hour just to make them edible but they were good finally with the sauce and other vegetables tossed in.

Sounds like my Grandmas and Moms green beans. Now for years I make them too. lol.

Throw in large pot with fat back (except I use bacon) little water and simmer for  hour or two..Then I add small potato at the end.
Southern style green beans...Oh and don't forget the side of cornbread.ha...

Mom made green beans like that too, but these were tough and limp. Moms would snap when you broke off the end to pull out the sting. Some of these weren't even very green but turning tan like they had been on the vine too long.

As I am reading this... Tina is cooking beans with onions in a tomato sauce. We call them "Sea's Greek Beans", a friend of ours ( from Grease ) said, never salt the beans until they are softened to the way you like them.

It looked just fine to me, Beth! Now that our oven is fixed (finally!!), Brian and I have been thinking of making lasagna, too. If I don't make it soon, I won't make it at all since warmer weather will be upon us before you know it. Instead of the usual way I make it with ground beef, I've decided to make a big batch of marinara sauce, and then cook my browned meatballs and Italian sausage in the sauce. Then I'm going to make the lasagna the regular way except I'll serve the meatballs and Italian sausage on the side. A friend of mine makes it this way and it turns out really good, especially since you can add a lot more of the sauce to the casserole pan when the meat isn't in it.

My father used to like when I made lasagna with Italian sausage instead of ground meat (I'd take the sausage out of the casing). This is when I still lived at home. Years later (my dad died early, at 61 years of age), I told Brian how he liked that kind of lasagna and sure enough, Brian asked me to make it like that so he could try it. He, too, really liked that version as well. But he doesn't care which version I make, just as long as I make it...

I usually just make a big pot of marinara and then put together 3 'loaf pan' (3 X 9 X 3 Pyrex bread pans) ~ mainly because I only have 3 Pyrex pans that size ~ LOL. I may bake one that night or I may just stick them all in the freezer for another time. I love having a meal all done and all I have to do is pull it out, let it thaw & bake it off. Somehow it always tastes better that way. Any leftover marinara gets frozen in 16 oz. deli containers for when I want spaghetti or baked pasta or stuffed shells. I'm not a big fan of Italian sausage so I normally use the fresh ground round from Fresh Market's Tuesday Special.

I went to the doc today. I'll live.

Upper respiratory infection, probably viral. Nothing to do but wait it out. And, yes, I did cough hard enough to give myself a small hernia. OMG ~ my 'Inny' is kind of an 'Outy'. Crap.

When I got home I warmed up the leftover stir fry for myself and Dane made himself a Greek salad.

I didn't even feel like eating. All I really want to do is crawl back into bed and sleep.

So I think that's just what I'll do.

I hope you feel better soon Beth.

Barb, what kind of smoker do you have? That brisket looks sooooo good!

Last night we had steaks, baked potato and grilled artichokes. We ate while watching the Oscars which was so bad that I don't know if I will watch it again. Chris Rock turned the show into a political rant and when he introduced the "white" orchestra conductor he made a very vulgar comment about the man getting "laid". I was so disgusted that they would even allow such a thing.

TV allows some of the worst things lately. What ever happened to censoring ??

There is a new one (I think its the Ad for the new show about Teachers) but the one with the woman biting and stuffing her mouth, and trying to speak with a full mouth, and saying ( Muffled, but we all know what she said," O.. huff ...yself!
NOW!!! What does that tell the children watching stuff like that??
Sure! The kids figure,"Hey, if they can say it on TV, then what's wrong with us saying it!!"

I didn't know, but Tina had a few breaded shrimps in the fridge, do we ate them, and shared a a sweet potato baked in the microwave. I never realized how good those potatoes are baked like that.

I just had two stale plain cake doughnuts with a coffee! I like them stale like that. That way when I dunk em, they don't fall apart and splash in my coffee cup!

I know it is now March 1, but I cooked last night, a big pot of Chili. I love chili, especially with lots and lots of beans!

I had three different types of sausage in the freezer, so I removed the casing, crumbled the sausage meat and used that. Cilil is really good! I am determined that I am going to use up everything in my freezer before I purchase something new.
