UNCLE JIMMY

UNCLE JIMMY

I forgot to mention, we had Italian Bread ( with sesame seeds ) that was in the freezer for two months.
It was as if the bread was bought fresh today! ....

What I do, is wrap the entire loaf ( with the bakery white sheath / bag it comes in, with foil.
Then, I place that in a plastic big zip lock, or one of the bags from the grocery store.
I let it thaw in the fridge overnight, and when ready to eat, we slice it and let it come to room temp. for about 20 minutes. It still has the crispy crust as when it first came out of the oven.

The savior, is the foil wrap. It prevents that freezer burn.

Lore, glad your hen came out good. I agree about adding onion to the salsa.....AND exchanging the ((ugh)) cilantro with ((yum)) parsley. Actually, when I read a recipe and see the word, 'cilantro', my mind just automatically exchanges it to parsley.

Jimmy - your meal looks yummy. Sure wish Ms. Tina could shake off this flu bug or whatever has her in the gutter. Good thing Gabe is being taken care of and she doesn't have to deal with his demands, for sure she'd push herself and just keep going downhill.

Barb ~ what a great idea to make a pot roast! You're a genius!! LOL It looks really good. And, unlike Jimmy, I can eat those onions till they come out of my ears! Love a good old-fashioned comfort meal when the weather turns cooler. And the leftovers are always good later in the week, too.

Remember PeteFL who use to make his own bread multiple times a week? He use to say the same thing about HIS bread. Said to take it out of the oven and as soon as you could handle it, wrap it in foil and freeze. He swore it came out just as fresh as when he took it out of the oven. Swore the foil was the only way to go.

I know what you're sayin'......a bargain is no bargain if it's not quaity. Good call.

***********

To heck with low carb, low calorie, low everything.....I've been hungry for pasta so lasagne is on the menu plan for tonight. I started by making a large pan of marinara with meat and it smelled so good it made me think of lasagne. That's all it took for the decision to be made.

Even after two pans of lasagne were made, I still had sauce left to cool and then store in 16 oz. freezer containers.

I'm just about ready to put this one in the oven......another one is already in the freezer!

Supper was amazing! I refuse to deny myself what I love......

Dinners in January, 2016 - Page 7 IMG_20160111_170917819

And, surprisingly, since I was busy cooking and doing laundry all day.....I forgot to eat lunch. By the time I realized it, I decided to just wait for supper. It's not the best way to cut calories but it seems to be fine for today.

That chicken is so cute! Nice job on the grilling, too. Great color....

No bacon for the Brussel sprouts? It's nice the stores are carrying sprouts for longer than just the holiday season now. Good stuff!

Golly, Norm, that looks like a fun way to get out of cooking supper.....LOL

I love the idea. What is your heat source? Propane? I don't see any cords....hmmmm, that could be neat to use out on our patio.

It is a portable propane heater from Sam's Club. It puts out a lot of heat.

Correction, it uses butane, not propane. We have used it about 5 times and still on the original tank of fuel. That's probably about 3+ hours.

We had leftovers tonight. He had leftover chicken stirfry and I had the last of the chicken noodle casserole. I'm not really full so I'll probably snack on an apple or two later.....
