It has been years since I made RK treats. I am going out and buy the makings today. With the added extra butter, do the RK get soggy after a while?

No bugs.... they do not get soggy. They will dry a tad if you let them out uncovered for like two days. When you press them in the pan, don't stick them in the refrigerator to cool. Let them cool to room temperature naturally.

I'm eating some now as I write this, and they are still the same texture from two day's ago that Tina made them.

I just told Tina to hide them. They are so addicting.

Huh! .... and now Tina fried meatballs to make spaghetti sauce, and I am eating them. ( Well sneaking actually ) "Remember...everything is better when you sneak!"

It is impossible NOT to sample a meatball when making them.

So I put the lard in the freezer . Holy cow I darn near could not get any out of the container for biscuits I made this morning. Then I put the buttermilk in the freezer. Maybe I should have not done that????

It is going to be 80 here today. What a contrast.

I saw some flat cut corned beef brisket for $3.99/lb. How do you cook those things? The last time I did a corned beef it was a point cut and was pure fat and so salty that I had to toss it. I used the little seasoning bag that came with it and it was awful.

The liquid it comes with is brine. It is naturally salty. I cook it by rinsing it, putting it in water, bringing it to a boil, remove and pour out the water, add more water to cover and boil it with:
To cook brisket

10 black peppercorns
6 whole allspice
12 sprigs parsley
3 cloves garlic peeled, sliced
1 onion. peeled and sliced
1 celery stalk
1 carrot

You can use a bottle of beer for some of the water if you want.

I cook the vegetables in the cooking liquid after the brisket is removed or during the last 10 to 15 minutes of cooking.

Thanks Norm for the recipe. I am not all that crazy about corned beef by itself but I do love Reuben sandwiches with Russian dressing, rye bread, cheese and sauerkraut. I am drooling just thinking about it. My mom used to make one every year but I wouldn't touch it. It looked raw and stunk up the whole house. That and the cabbage. PHWEW!

I made a bacon cheese beer bread .

I made a chicken, vegetable, noodle stir fry. It was meh.

We went out to eat at the country club down the street last night. Today we had Dr. appointments. I'm reheating leftover pot roast and any vegetables that need to be eaten instead of tossed. It'll be a mish-mash of a meal but I'll bet we are both full when we're done.

Well I almost made tuna casserole lol then decided not too. Have not made anything yet.

That is right! Crybaby!!! She has been AWOL for a while now. I hope she is ok..she does have a serious medical condition....Wonder if there is a way of contacting her....

As long as Imelda is away visiting.. I think she did mention it before she left.

Imelda left in January to visit her family...usually gone a little over a month.

Crybaby was last here to read what we've been up to Feb. 10th. Sometmes she just stops by to check out what we're doing but doesn't make any posts. When she's feeling better I'm hoping she brings us up to date on how it has been going for her and Brian.

Thesweetestpea was just here and promises to bring us up to date soon. Sounds like she and Larry have had quite the go of it in the last year.

LisaSD had some health issues but said she'd get by for a visit. When the time is right, I'm sure she'll let us know how she's been.

At best, we can all include them in our thoughts and hope they know we're all concerned about their health. We miss them and hope to hear from them soon.

Lisa is active and seems to be good. She has a online store and other jobs . I see her on Pinterest .
