I can eat a few cheeses....mozzarella (if warm & melted, as in pizza or Barb's casserole), cream cheese, parmesan cheese (again, if warm & melted) and sometimes a provolone melted on French Onion Soup. Oh, and I can eat something like Alouette Herb Cheese Spread because it's similar to cream cheese. I also can sometimes 'fake' myself out, like when I make lasagne and use cottage cheese blitzed in the mini chop mixer with egg to replicate the ricotta, but it's got to be well mixed in and heated until it melts.
That's about it....no American, no cheddar, no colby, no Swiss, no goat, no, no, and NO....
