Last summer I was watching Sara M on PBS and she grilled duck breast.OMG I get in so much trouble watching these cooking shows.I went right out and bought duck breast.No fresh so I got frozen.Put it in the freezer then forgot about it .Dried cherry's must be 2 years old.lol.

Wow... beef stir fry...banana pie...and quack quack dinner.
What a great diverse meal plannings for today!


All we did was a ho hum chili con carne....I want something to bite, not mash in my mouth.
The chili was good. Tina concocted it....I had three bowls of it. I'm done with it now.
I won't eat it anymore. Enough is enough !!!....

I don't know if there would have been enough for you to bite down on at my house tonight, Jimmy. The chicken came off the grill extremely well done and moist. Even my wing tips weren't all that crispy. But, boy was it tasty! I had packet potatoes w/onions and red beet stems & greens to complete the meal.

I made Beths favorite,...COD fish fillets with butter and wine sauce. Made yellow rice...Tina said it was a little hard. And she made wilted spinach with garlic whole to cook it. Gabe had meatballs and noodles/ beans and a sweet potato.

I have a corned beef in the oven at 225ºF slow and low to be transformed into Pastrami.
It is starting to smell really delicious in here!
Got good seeded rye bread .... Tomorrow will be a great lunch.

We had Buffalo wings (actually used Bufalo sauce) and because Cassie does not like food with bones, I also made some Chicken Parm. with pasta and Alfredo sauce, italian tomato soup -Giada De Laurentis recipe-and Italian bread made with sour dough starter.

The bread looks great Norm!
So nice and dense.
Tina picked up two loaves of Italian bread ( Twisted with sesame seeds ), and I grabbed them and stuck them in the freezer.
Bread keeps in the freezer very well if I wrap it in foil; just to cover it, and then in a large freezer bag. The two gallon Ziplock ones work great. I press out the excess air, and zip lock it.
The last bread, was in the freezer at -10ºF for 4 weeks.
I take it out, and just leave it on the counter to thaw slowly in the foil and bag.

We could not tell the bread was frozen. No freezer burn, and not dry. It even had a slight crustiness to it.

I am starting to freeze by adding foil to everything possible; such as cookies / breads / sausage / meats that we buy in bulk, and then I portion it in separate packages.

I can eat a few cheeses....mozzarella (if warm & melted, as in pizza or Barb's casserole), cream cheese, parmesan cheese (again, if warm & melted) and sometimes a provolone melted on French Onion Soup. If we're having the regular chicken wings, when I separate them, I'll grill them and sauce them. Then I can eat 6 to 8 of the 'flapper' section. Dane gets the drummies.

Go figure, with the relatively small size servings I eat....how the heck did I pack on all this excess weight???

Oh, never mind. I know the answer. Just somehow it doesn't seem fair sometimes.

And, Jimmy, those beet stems & greens are a favorite. Even my girls use to eat huge servings of them. Good stuff, better than spinach.

I have the beets cooked & ready for another night.

What a nice FIL you are, Norm. I'm sure Cassie appreciates you taking in consideration her preference. The cutlets with Alfredo look great!

Did I ever post the recipe I found for an Alfredo type sauce? It's quick and easy and you can adapt it for smaller amounts to be made at a time, the recipe is very flexible. I like to use it along with my homemade marinara ~ the two together seem to go well together.

Parmesan Cheese Sauce
(simplygloria.com)
Ingredients
8 ounce cream cheese, cold or room temperature
4 tablespoons (real) unsalted butter
2 cups heavy whipping cream, divided
1 1/2 cups half & half, divided
1 cup grated Parmesan
1 cup shredded Parmesan
1 tablespoon Italian seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
Salt & pepper, to taste
fresh parsley for garnishing, optional.

Instructions
In a large skillet on medium heat, put in the cream cheese and butter.
Pour in 1 cup of heavy whipping cream and seasonings. Whisk together until cream cheese has melted and all combined. It will be thick.
Whisk in 3/4 cup of half & half and bring it to a simmer for a few minutes. Keep whisking! It will begin to thicken up.
Add the rest of the of the heavy whipping cream and half & half. Whisk and simmer until it comes to a creamy consistency. Usually takes a few minutes. The longer you let the sauce simmer, the thicker it becomes. If it gets too thick, add a tablespoon of half & half at a time.
Turn temperature down to low.
Whisk in the grated Parmesan.
Stir in the shredded Parmesan.
Ready to serve over your favorite pasta!

It's such an easy one to throw together.....a lot of times I just start with a bit of butter & the cream cheese, not measuring, add the Italian seasoning, whatever amount of grated parmesan I have and enough half & half to get to the consistency I want. Other times I've added things like carmalized onions or mushrooms....it's really adaptable to so many recipes. A couple times I've used Penzey's Parisian seasoning (tarragon, chervil, chives...) instead of the Italian seasoning. That was really good, too.

Brie and slice of pear or apple. Brie with good ham.. Fontina.Love blue cheese on a grilled sandwich.

I bought some smoked cranberry cheddar OMG good on rye. Also smoked swiss on ham with honey mustard on great bread.Man I love love grilled sandwich..
