I pulled some ground chuck out of the freezer this morning and finally decided to make some stuffed shells.  I've got a casserole for tonight for the two of us and a larger one to stick in the freezer for a company meal.  The filling is ground beef, onions, seasoning, grated parmesand & grated mozzarella.  I put marinara in the casserole, add the stuffed shells, then a layer of parmesan cream sauce and, finally, another topping of marinara.  I'll probably add some grated parmesan at the last 10 minutes, when I take the cover off.

Plan to add a salad & some fresh (bakery) hard rolls.

I have the chuck roast recipe from Beth with the three packets of seasoning plus some mashed potatoes and peas and carrots.  Charlie hardly ever eats salad but he loved one I made recently and I am making it today again.
