APRIL..Whats Cooking..

 easy when you buy the stuff already made lol.

We had Cuban sandwiches made with leftover ham and rib meat.

We had a Birthday meal and cake today.
DIL was 43 today.

Had my favorite,.......chicken ( yeah right ) that Tina picked up from ShopRite; a breast and a fryer roasted in their rotisserie roaster.

Peas.... carrots...mashed potatoes and gravy and stuffing.

Had the cannoli cake from Calandra's Bakery in Fairfield, NJ.

I especially like Italian Birthday Cake !!!

I tried to keep all the cooking heat and smells out of the house tonight so I attempted grill roasted potatoes w/onions on a sheet pan in the grill. The onions got a little past what I planned, but I like 'em that way....Dane, not so much. Oh well, he just picked 'em out. LOL

I heated up my cast iron skillet on the stove and then took the hot pan out to the side burner to cook the fish. It worked out pretty well, although it's practically impossible to regulate the flame in a breeze. After browning the fish I put it on the potato sheet pan to finish off in the hot "grill oven", no flame under it.

Golden beets (can't call 'em golden red beets....lol) and a cucumber/onion/sour cream salad rounded out our meal.

Chicken Marsala.

Ohhhhh, it's been a long time since I've made that....looks great, Barb!

Now you've got me thinking ~ although I was just thinking this afternoon about a chicken parmesan...quick way with pounded chicken cutlets, a bit of breading and a slice or two of fresh mozzarella with a fresh tomato sauce spooned over. I think that just might be on my menu plan soon. I've been hungry for a pasta dish.

It is hot here today, about 100. Unfortunately I am making a cold weather meal: meatloaf.

Yeah, Jimmy ~ looks like the mountain gave way to the 'lava flow' of cheese.....not altogether a bad thing.....

No, but a nice slather of some leftover marinara wouldn't be bad at all.

(of course, this comes from someone who grew up eating meatloaf sandwiches with KETCHUP !! ewww.)

I was rearranging the freezer today, sorting through, and came across a container of jambalaya....perfect for our supper. All I had to do was stop for a dozen fresh shrimps and some hard rolls and supper was practically on the table.

Not going out to grill    bugger waiting for me..

so kielbasa for me tonight.

Did not have any.It was spur of the moment anyway.Now the humidity kicks in & the buggers.   

My Mom's 90th birthday party. Held it at her house and it was a surprise!This is from January. I made the cake and cooked most of the food in Jersey. The rest was cooked in her kitchen. I told them I was making food for my daughter's party. My Nephew took her to the movies and we decorated the house. It was a huge success!

Oh, how wonderful! I'm sure it was exciting for her to have a 'surprise party' for her 90th!

This is her when she came in the door. She had no idea. Couldn't have done it without my wife, sister and her two friends. The family is getting so small. And it's hard for the older ones to come
