I'm going to give these a try tomorrow after grocery shopping.  Similar to Egg McMuffins. While perusing other recipes online, I found one where they put chopped baby spinach on top of the eggs and gently mixed it so that egg covered the spinach. They also recommended fresh mushrooms and other veggies could be added as well. I think if you had some leftover cooked broccoli or other veggies, you could chop them and add to the egg mix for some extra nutrition. They also recommended using turkey sausage or veggie sausage instead of the ham. I think I might also lightly butter the muffins to alleviate dryness or maybe some salsa.

Since I got home later than planned last night I ended up having a couple pieces of Publix breakfast bread and coffee for my breakfast. I'm going out for lunch and will have to come up with something out of the freezer for supper. Maybe I'll have time to go get some fresh vegetables later, not sure.

Barb, what's your egg sitting on - topping the tomato slice?

I had mashed the other night OMG so good. What a treat for me.When they are gone no more treats for me Sad

That's a good thing. I'm grateful I can (and do) eat just about everything. It would be lovely to drop 20 pounds but I'm at the same weight I've been for the last 15 - 18 years. I don't think it's going to change anytime soon. The only way I'll lose the 20 pounds is if I get serious about more physical activity.....and I don't think walking from the refrigerator to the sink to the stove is going to do it for me!

I was so anal about my foods for the longest time.Then just in the last six months or so my BG ## dropped & I have had lows all the time.I have to carry BG tabs at all times.I can be 115 then 30/40 minutes later a 70.I can feel one coming on too,so that is a great warning.

Doc said to give myself more carbs so I did NOVEMBER...Breakfast & Lunch Thread. 3267860543 I thought I would be high but no not yet.I stay within 120,then can drop to 60.

I have no ill effects either .Eyes good.No neuropathy issues ( bad eating habits right there) my kidney function is great.

and that, certainly, is a good definition of "pro-active" health care.

You have taken it upon yourself to learn and observe how your body reacts to what you eat, just as anyone who has health issues should. A man I've gotten to know here in The Villages (one of Lyn & Bill's oldest friends) reacts terribly to gluten. He knows what he can and cannot ingest and is very aware of what is in what he eats. He doesn't depend upon anyone to "take care" of him because, as he says, it's HIS suffering and he's not going to take a chance of being in pain by being careless.

This morning I made a kind of hash with some leftovers -- cubed potatoes that were baked with chicken, some pulverized beef roast that we used as a sandwich spread and two scrambled eggs, all mixed together. I put it on one of the Brownberry sandwich rounds with a slice of American cheese and it was quite good and I cleared a couple of containers out of the fridge.

I was craving some vegetables this morning so I made some vegetable spaghetti (carrot, onion, green & yellow zucchini) and topped it with a couple over medium eggs.

pea... the other day, GD said when she opened the refrigerator, WOW! Pops....."There is space in the fridge!"
I said, Shhhhhhh! "Don't tell Grandma because she will fill it in!"

Tina had those plastic containers in there from the appy with olives. 12 olives of one kind in one container; and then another 12 of a different kind in another.  Well, with 6 different kinds of olives, I just took them and put them all together into one container. Yay! I made space!"
Oh! "If only I could get rid of some of the 7 jellies and jams that are open and in the shelves on the door!"

How true Beth!

In this house we can open the fridge looking inside for something to eat, and the Eggs, is always the back up that are so flexible to make so many different ways.

BTW... The eggs over the veggies looks great!

Mine is lunch tho.

Jimmy I use half jars of jam in sauce s for meat or chicken. I use any light or orange type on carrots.Sometimes I add dijon mustard or if I am doing a stir fry I sesame oil or soy sauce or hoisen.

That sounds like a do. I will mix them all together and call it Fruit Surprise Jam.

I had a couple hot dogs with some warmed sauerkraut that was sitting in the fridge in a container.....behind a couple bottles of condiments.  I think it was hiding.  But I found it and now it's no longer waiting to be used.

Nice egg sandwich, Barb. Did you melt any cheese on it?
