Niagara Visitor

A [piece of salmon baked in the oven and a whole bunch of steamed broccolli last night. I joined Weight Watches a month ago, decided that the workouts at the gym would be easier if I lost some of this extra padding.

The night before I made some Hungarian Goulash to take top son's in-laws. Anne (his mother-in-law) has inoperable brain cancer, so I am making something once a week for them so they don't have to get take out so much. She is Hungarian so I thought I would try it. It turned out good, even though there was too much caraway for me.

I just had to post this. I think it's funny.
Tina bought one of those 10 inch tarts. It looks like a pie, and has lattice crust on top, with powdered sugar. Under the lattice, there is a sticky, pasty, thin coating of apricot filling.
I call it fly catcher glue.
Anyway, I was wishing for sweets, so I dug off the lattice on half the tart, and ate it.
I left the sticky stuff. Tina will flip out when she sees that. LOL

My DH does something similar: he eats the streusel and apples from a crumb top apple pie and leaves the empty bottom crust.

My BIL will eat the outside chocolate off of a piece of See's candy and leave the filling. It gets worse: he puts the filling back in the box.

Oh that Sees Candy is so good. I know they are west coast, but there is 1 outlet at a mall in somerset county ( Bridgewater Mall ).
I ate a whole 10 oz box of the peanut brittle in one hour.

Made a rotisserie chicken last night with potato salad. I have a ton of leftover chicken so I guess I will make some chicken enchiladas for the future. Tonight may be scallops.

Do any of you own a portable induction burner? What do you think of them?

Bugster2 wrote:The only thing I remember about the kitchens we had while I was growing up was that they were always awful and old. No dishwasher, no garbage disposer, a pink and then root beer brown fridge, worn through vinyl, electric stoves that were as old as the hills. We had one vinyl floor that was red with what looked like different colors of paint drops all over it. The fridge was on the back porch. Laundry chutes, a maid's room and bath, washer and dryer and a built-in ironing board. Somehow we had room for a mangle that would always give us a shock when we used it. My mother ironed the sheets and tablecloths with it.

At least it helps you appreciate the kitchen you have today, huh, Bug?! Todays kitchens, to me, are a dream come true. Though I love mine to death, I always dream about what I would do to it if I win Powerball or MegaMillions! I'd kill for double ovens in the wall (I can't bend anymore so I lust after them even more). I'd also like one of those arms so I could fill a pasta pot with water on the stove! And, of course, I'd like a custom Subzero fridge (even though I adore my fridge with the freezer on the bottom). After I add on to the kitchen with a Four Seasons Glass Room outside instead of the deck that's currently outside the kitchen, I'd be a happy girl!

I laugh as I do this thinking aloud when the take gets high and we buy tickets! Just a fun way to dream, you know?

There's nothing prettier and more delicious than homemade lemonade.  Gorgeous pic which reminded me of making that same thing this summer.

What's on my mind more right now is Saturday's Belmont and the mint juleps we make (yeah, I know, but we make 'em for all three of the races) this Saturday.  It's not humble but I make the BEST mint juleps you ever had.  I've never made them for a single soul that didn't like them (nor did I get anything but empty glasses back so the compliments weren't gratuitous).  I've also made them for tons of people that say they don't like them.  I think that' because people make them too strong.

I make a simple syrup infused with spearmint, and then I muddle more fresh spearmint with a tad more of sugar the day I make them.  I have some wonderful pottery tall glasses (8 in a wire carry caddy) which we put in the freezer ahead of time (the pottery glasses are Van Briggle pottery from Colorado).  I put a bit of crushed ice (thank God fridges do this now!) in and then some of the muddled mint and a couple of spanked mint leaves.  Then I put in some of the simple syrup.  I do this for a couple of layers (they're tall glasses) and then I add a good shot of good Bourbon (we use Woodford Reserve just for the julips).  Using a long spoon, I give it a nice cocktail stir and then finish up at the top with more muddled mint/sugar and another bit of the simple syrup if there's room. Lastly is a very healthy sprig of fresh mint sticking out of the top for ones nose, also spanked to bring out the flavor and the smell.  I swear, they're like a fresh spearmint snowball with a kick!

The only problem I see with those taps that fill a pasta pot on the stove is the fact that you still have to lift the pot to empty it.
