BREAKFAST/BRUNCH/LUNCH ON SEPTEMBER

I grilled some eggplant this morning at 8am. lol..Hot as the dickens here.

We went to the Farmers' Market today.....Woo Hoo!!! (Thanks, Barb!)

nice ~ smoked turkey, avocado & tomato ! Bet that was worth the time to put it on the grill.

I love, love, LOVE my Charbroil Infared gas grill.

Three burners....left, middle & right. I can have just one on or all 3. The 'infared' WWW grate under the cast iron grates catch all the fats and juices and keep from having flare-ups. I can put a packet of wood chips on the far side, over a burner on high, and it will smoke away for my ribs, etc. I can wrap my ribs in a foil pan and 'steam' with some liquid (most likely Coca Cola) before browning and slathering on some finishing sauce.

One stop smoking / grilling.

Love that grill.

I had some peaches that needed to be used so I chopped one up, added some onion, finely chopped jalapeno, a bit of sugar (to get the juices running) and some rice wine vinegar.

Had peach salsa and tortilla chips for my lunch.

(sounds really healthy, huh? LOL)

Imelda, you silly girl....you tell us you are 'no good in baking' yet you continually post pics of the most beautiful items that come out of your oven.

You, my friend, are a true BAKER. And darn good at it, may I add.

and for those who say 'cooking for one is too difficult....' ~ Barb has just proven it's just a walk in the park!

$22 sandwich, that's for sure!

I didn't take a pic.....but picture me sittin' at the table with a cold meatloaf sandwich and a handful of chips on my plate.

I can't decide if I like the original meatloaf supper or the 'leftover' cold meatloaf sandwich better.

Is that a ricotta pie, Barb? What are the ingredients?

I had a plain old bacon and eggs breakfast...

6 small zucchini, sliced thin (I leave the skin on)
4 garlic cloves, chopped
2 shallots, sliced thin
1 large  onion, sliced
kosher salt & pepper saute all this ..

4 eggs, beaten
1/2 cup of Parm, grated
1 cup (8 oz.) of fresh ricotta cheese
butter & dried breadcrumbs for the pie dish

Preheat oven to 350F.

Liberally rub butter all over a 9" pie plate and dust with dried breadcrumbs. This will be your crust.

add wet to dry.bake..35 minutes.
