I can't remember if I like kale or not. I tried kale chips and thought they were awful. I have a recipe for chicken lasagna that uses kale. Would spinach be a good substitute?

Absolutely - just don't pre-cook it. I'd just put it in raw because otherwise I would think it would get too soft and almost disappear in the dish....JMO
