One of our neighbors brought a salad to a monthly pot-luck gathering that was really good. I asked if she would share her recipe and she said, "Sure! Salad kit is sold at Sam's Club, complete with the dressing."
I think I've come up with a close 'copy-cat' recipe. I made it this morning and it's in a zip top bag in the refrigerator so I can see how long it lasts.....
Kale Broccoli Slaw
1 pkg. Broccoli Slaw Mix
Equal amount Thinly Sliced/Chopped Green Kale
½ c. Walnuts, broken & toasted
½ c. Sunflower Seeds or Pepitas
½ c. Dried Cranberries
Dressing:
½ c. Mayonnaise
½ t. Dijon Mustard
1 – 2 Tbsp. Honey (to taste)
1 t. Sesame Oil
1 t. Soy Sauce
¼ c. Rice Vinegar
½ c. Neutral Oil (like Canola)
Whisk together all the dressing ingredients. Pour over salad ingredients and mix well. Refrigerate at least 2 hours or days in advance. Holds well.
