I know you hate cilantro, Beth, but for those who don't, this is a super quick salad/side dish. This is good alongside flautas or enchiladas.
Radish Salad
4 radishes, very thinly sliced
1/4 cup chopped cilantro
2 Tablespoons finely chopped red onion
1 teaspoon fresh lime juice
In a bowl, toss the radishes with the cilantro, onion and lime juice; season with salt and pepper.
