OMG... DD brought over 50 Lbs of cake flour, and 50 Lbs of Corn Meal. Plus she wanted to give me the other 50 Lb. bag of cake flour!!... affraid

What the heck am I to do with all that? LOL
She went to the commercial bakery to pick up the barrels of dough, and buns and cakes for the pigs to eat pig , and the guy gave her all that flour and corn meal.

I been on line to see how to use that kind of flour in pizza dough.
There was a recipe from of all places, Americas test kitchen, and it can be mixed with AP flour for pizza. I will try it. I also think it can be used for pancake and waffle batter too!

Anyway... I made a doz. corn muffins tonight!

Free is always the right price.....

But what in the world are you going to do with 100 lbs. of the stuff? If your freezer is anything like mine, there is no room for that amount unless you lay the freezer on it's side and pour the stuff in around everything on the shelves......like sand in a 3-minute timer.

I would be bagging it and in the freezer it goes..

My KA recipe book calls for cakeflour in most of the recipes lol..Isn't it just cornstarch added? I never buy it..

Well....what I'm going to do, is in the utility room, there is a set of cabinets that underneath is always cold. In containers, and when it gets bad...out in the garbage it goes.
Believe me.... it's gonna get bad very very quickly!

Can't give it away, because the younger generation do not bake from scratch.

I just cleaned out my old flours . Bags of something that the writing came off .I have no idea what it is . From now on I need to just put the bag in the bag ha.

Norm gave me a great tip, and that is, to freeze the flour for a few days.
That eliminates bugs and those inch worms. Then I put it in the containers.

I always freeze flour and corn meal and any dog treats I buy !!!!

Jimmy, Swans Down is the cake flour my mom used and what I used to use when I baked cakes...the best...

Jimmy, Swans Down is the cake flour my mom used and what I used to use when I baked cakes...the best...

Yeah! that is good flour.

We have a box of Swans Down, and it's not opened, and probably way outdated.
Once in a while Tina will make a cake from scratch.

Our church does have a soup kitchen, but there is no labeling on the flour and corn meal now. Maybe they can make "Angel Food" cakes and sell them at the church! LOL ....

The corn meal, I will use. Polenta, corn bread, Corn muffins. etc....

Would you believe, I made Corn Muffins with some of the meal, and I forgot to add the yeast to the recipe; plus I added a whole teaspoon of salt instead of the 1/2 teaspoon in the recipe. Boy, they were so salty and dense. Crying or Very sad

yeast??? I have never used that in any corn meal recipe..

yeast??? I have never used that in any corn meal recipe..

You are right Barb!... Don't know where my head was, when I was following the recipe, but it was the Oil ... I added 1/4 cup, and the recipe called for 3/4 cup of oil. Here is the recipe I used!

I was fixin to make a carrot cake the recipe said 2 cups sugar and 1-1/2 cups oil ! I thought wait wait that is not the recipe I use lol
I looked and sure Nuf 2/3 cup oil !!!

And could you believe, Tina said the corn muffins were good.

I had one, but it was not as sweet as I had made the same recipe before.

We use Domino's Brand sugar too!

Haaaaa! .... So OK! ... I took a lookin at some recipes for Angel Food Cake. We all love Angel food cake...
So , not being much of a baker; other than following a recipe to bake something, I find like the first three.... I was like, affraid What??? 10 egg WHITES ????

I looked further, and every recipe calls for between 9 and 12 eggs whites.
No way am I going to make a cake that requires 9 eggs. What the heck am I to do with all those yolks?

Tina said, she could buy the egg whites in the carton. Like egg beaters. I love them for scrambled eggs, but they MUST be colored yellow ones for me to eat them.

So for cost .... A good ole box cake Angel Food that you just add water, is fine with me.

Yep. I used to make homemade angel food cakes when I was young and living at home. I tried to make a yellow cake with the yolks but found out homemade cakes (other than angel food) were a lot harder to make -- mine just didn't come out moist, way too dry. I don't have a stand mixer and always thought I'd have more luck if I did but that might have just been wishful thinking on my part.

You're right about the boxed angel food mixes coming out really great, too!

Yep, didn't think of making pound cake until many years later.  I started cooking when very young but never was much of a baker.  Never liked measuring stuff like you have to when you bake and baking always uses the messiest of ingredients -- sugar, flour, powdered sugar, melted chocolate, etc.  

But that still doesn't stop me from wanting a stand mixer.  If I had the room (or a pantry) and they weren't so heavy (now that I have such a problem with my back), there'd be a pearl white one sitting on my counter as we speak!  Brian wants me to come with him to the Naval base to price them there but I keep telling myself, "I don't need one, I don't need one!"

My son has red KA he got a few years ago , I used it when I was at his house . World of differance between his and my workhorse from 1989 made by Hobart in Ohio . My D is now on her third KA . I will never get rid of mine !!!

I, too, love my KitchenAid stand mixer. DD said she has to order a new paddle because she's worn her's out...the coating started to peel from being used so much. Her's is bigger than mine, I think.

I love making angel food cakes. But even better is my grandma's recipe for Lemon Sunshine Cake which is a lemon chiffon cake ~ similar to an angel food cake but uses the whole egg instead of just the whites. Whenever I make a bunch of noodles (like for beef & noodles) I save the whites and make my angel food cake then. That way I get to use all the eggs.

DD makes a lot of scrambled egg whites for their breakfasts....SIL eats a 6-egg scramble with only one whole egg. She just tosses the other 5 yolks. l've never seen any family go through as many eggs in a week as they do!

When you get back home, Beth, if you wouldn't mind, I sure would love getting your grandma's recipe.  A lemon chiffon cake sounds divine.  Both Brian and I love anything lemon!  And the man does love his sweets...

I can't imagine tossing those 5 yolks, and I really can't imagine you tossing 'em!

When I get home I'll post that recipe. I think I put it in a thread someplace, I think Imelda has made it....but I can't find it so I'll put it where it belongs.....(LOL ~ you'd think I would be able to follow the rules since I made them up!)

And don't be taken back when you see the recipe. It calls for 'lemon flavoring'....which is usually so fake tasting. But, in the recipe, which is over 50 years old, to be sure, it works well. I love the texture of the cake and it's really good if you serve it with fresh blueberries or strawberries.

It's one of those cakes you keep slicing off a bit here and a bit there to just stand at the sink and eat it out of hand. Not that I would ever do anything like that ~ but I've witnessed OTHERS doing just that sort of thing on numerous occasions.

And you're right. I would NOT throw out a bunch of egg yolks or egg whites. It just goes against everything I was raised to learn. Waste not, want not ~ and all that sort of thing.
