But lately I've wanted to can meat so I'm going to try making carnitas for canning. It's really simple. All you need to do when you open it is put it in a single layer on a baking sheet and bake for a few minutes. "Almost" instant carnitas. They're perfect for when I'm out of town and DH has to fend for himself.
