I made salsa verde last summer and I've given most of it away. Now I made some for myself (and anybody who hounds me for some will get some too).

But lately I've wanted to can meat so I'm going to try making carnitas for canning. It's really simple. All you need to do when you open it is put it in a single layer on a baking sheet and bake for a few minutes. "Almost" instant carnitas. They're perfect for when I'm out of town and DH has to fend for himself.

Gosh, now is the time I miss our PeteFL.

He would have had wonderful advice, recipes and stories to help you along when canning meat ~ or anything else, for that matter.

I do miss Pete.

Luckily I know how to can meat....I just haven't done it. I was trained by the folks at Jarden (Ball and Kerr) so I'm pretty comfortable. I just haven't done it before. Everything is in the canner right now and I'm just bringing it up to pressure.

And....the salsa verde is the best I've ever made. I might not want to give this away.
