Barbara, I've posted this recipe many times (all over the place!) as they're truly baked beans to die for. Brian loves these and makes them WAYYYYY too often but I thought it would be good for the second level of your smoker. You can cut down the amount or just make the whole recipe and freeze in some smaller amounts.

Best Ever Baked Beans
Recipe from “Cook’n Cajun Water Smoker Cookbook” by Sondra Hester.
Serves 8

4 to 5 lbs. canned Pork and Beans
1/2 cup Onion - chopped
1/2 cup Celery - chopped
1/3 cup Bell pepper - chopped
2 Tablespoons prepared Mustard
1/2 cup Molasses
1 teaspoon Worcestershire sauce
3 to 4 drops Tabasco
1/2 cup Barbecue sauce - bottled or homemade
1/2 cup Catsup
2 Strips bacon - uncooked and cut in half

Combine all ingredients, except bacon, in large ovenproof container. Lay bacon strips on top. Place on smoker grid and smoke for 2 to 2-1/2 hours.

Note from me: If you don’t have a smoker, you can cook at about 350F for about 45 minutes to 1 hour, until the bacon is curling. Better flavor in a smoker, but divine beans without!

Makes 8 to 10 servings.
