I wanted to test my "theory" that my braised kale could be frozen in serving size snack size bags and not be mushy.....and it WORKED! At least I didn't think the freezing adversly affected the taste or texture of the kale.

But I didn't really put it on a nice plate (and I didn't bother with any toast!) but here's a pic of the first time I made this breakfast/brunch of soft boiled eggs on braised kale:

I decided to do an early breakfast instead of my brunch schedule....

I love the color of the berries mixed - just sorry I don't have any raspberries to add (ok, so I admit - when I have raspberries I usually just eat them like candy right from the plastic container!).

I've been purchasing the local "organic" blueberries - I don't think they are shipped out of the area. They're pricey ($6/full pint basket) but have the most amazing flavor and sweetness. I'm now out so I'm looking forward to going to the Farmers' Market on Saturday to get more.

This morning I had a couple soft boiled eggs and a piece of bacon. Why is it sometimes 2 minutes is just right for frozen bacon in the microwave and other days it comes out so crispy it's close to being burned? I gotta pay closer attention, I guess ~ lol.

This morning I was busy preparing some dried foods for my family visit this weekend, my DH walked back and forth to the kitchen, then I remembered he had not had breakfast yet ( only couple cups of coffee) so I made this quick brunch for him... with homegrown chives + frozen potato + cheese and 2 sunny side up eggs

Imelda ~ yes, first cooked bacon & left fat in the pan. Took the crisp bacon out of the pan. Softened the onion. When the onion started to soften I tossed in the grape tomatoes. Last thing in the pan was the spinach just to warm in the hot pan....then all went into a dish and the spinach steamed from the heat of the onions & tomatoes. Two beaten eggs into the same pan (still enough sheen of bacon grease so no sticking), flipped over and added some whipped cream cheese, added the vegetables back on top & folded over on my plate. Crisp bacon sprinkled over top.

I don't know if I like spinach or asparagus omelettes better...both are pretty good.

I made it today... not exactly the same, I used whatever I had in my fridge.. a Louisiana hot link, green bellpepper, tomato and spinach (proudly say it out loud.. fresh homegrown spinach Breakfast (repeat) 3593629538 ) too bad, my eggs broke.... and I don't why my eggs break easily...

Imelda - I missed seeing your pic from Saturday....AMAZING!

And don't worry about the eggs breaking....happens to me all the time. I just pour on some taco sauce and it doesn't show in my pic! LOL

I love that you can add anything and have it be a healthy meal with protein and vegetables. And how neat you're getting fresh spinach out of the garden already! I'm jealous...mine comes from a plastic box at the grocery store. LOL

Here's a pic of my breakfast this morning. It's the same as my omelette from the other day but just rearranged a bit. I cooked a piece of bacon & removed the crisp meat to sprinkle on top. I finely chopped some onion to cook in the bacon fat (there's not a whole lot when you only cook one slice of bacon....). I beat some whipped cream cheese in with a couple eggs and poured them over the cooked onion - when just about done I tossed the spinach on top and folded over until the spinach was wilted.

I did have a piece of toast this morning - because I WANTED it! But it was only one slice of bread and that's better than the two I use to have. So, I figure this is still a "low carb option" for me.

I was full from eating the eggs so I've saved my yogurt & fruit for a mid-morning snack.

It's difficult to have a whole lot of variety when you're cooking for one.

When I buy a package of baby spinach I have to come up with ways to use it before it goes bad.

Here's another omelette with bacon, spinach, grape tomatoes, onion, cream cheese & some taco sauce topping it all off for a little spice.

We had omelets for dinner last night: Bacon, cheese and onion. Brian made the bacon in the nuker, I sauteed some chopped onion with some bacon grease, garlic powder and salt and pepper.

Once I had the eggs and milk mixture (with Tabasco, salt and pepper and a bit of grated Romano) in the pan and ready, I added a couple of thin slices of some jalapeno velveeta, then put the hot onion mixture on top to help with the melting. I peeled a smoked red bell pepper and cut it in half and put a half of a pepper on top of the onion, then added the bacon, which I ripped into pieces. Then I folded it, cooked it a tad more (Brian likes his eggs well done but I cook mine less) and flipped it onto the plate. Was pretty as well as delicious.

Brian could only eat half of his and called me from work this morning to tell me the other half of his omelet only lasted until 10:30 a.mm. when he heated it up in the microwave. Whenever I make him a lunch, it never makes it until lunch time. He says it's because he "knows it's there."

Even though I don't do the cheese, I do usually have it for Dane....

Amazing how some people say Velveeta is nothing they would use, yet it melts so nicely and everytime someone makes that Velveeta/Salsa dip it's gone by the end of the evening.

We had Velveeta at home when I was a kid, but I never got it when I went out on my own until Cassie got some for one of her Mexican dishes. I put about a tablespoon of it in an omelet and have been buying it ever since.

we had veggies Frittata for brunch today.. we both were very hungry after coming back from church, so I fixed this easy brunch..

Laughed, as Brian loves that dip, Beth, so we uually always have Velveeta on hand (love that you can store it in the cabinet until you use some of it). Why Brian bought the Jalapeno Velveeta I don't know but it's white and not very hot. Sometimes I use cheddar in omelets but I also like to include some Velveeta just because it melts so nicely!

I got this at an antique store last month. Just in time for Valencia oranges to come back in season. I have used it three times now. Of course I had a glass of OJ with eggs, toast and coffee this morning. In my opinion, there isn't any sense in drinking orange juice if these oranges aren't available. Navel oranges make watery tasting OJ and Clementines and the like are good for eating but don't have very much juice.

That juicer is SO neat!

The one I bought at the thrift store is ok for one or two lemons but not much else. There is a citrus packing hose close to the villa and they sell the fresh squeezed Valencia juice...let you stand there and taste one before they squeeze a bunch for you.

I ate too much yesterday so today I tried to slow down today, I made some celery and tomato juice for our breakfast... though I like eating both of them raw.. but I almost gagged Shocked when I tried to swallow them Shocked

let's hope my stomach can hold it otherwise it's good for the next couple hours until lunch time
