I can remember all the rhubarb that grew around the telephone pole next to the gasoline tank on the farm. Man, we couldn't use it all. Whenever Mom had the spare cash she would buy a couple extra 5# bags of sugar and we'd make rhubarb sauce (like applesauce) to put in the freezer so we had it available all winter.
My favorite pie is rhubarb custard ~ made with evaporated milk & eggs. Super easy and always tastes like spring to me.
