I saw part of an episode of Sara Moulton making a BLT & Egg pie....looked good to me.

But she did something that confused me. She put her pie crust into the glass pie plate and then docked it, saying that would allow the steam to be released. Then she didn't blind bake it, she filled the raw crust with her caramelized onions, bacon, tomato & poured in her egg custard.
Who docks a crust that's getting filled with a liquid custard?
