Brownie Cupcakes

I tried and tried to get excited about making a savory dish to take to the cookout tonight and nothing sounds good to me.

I was looking at the recipes on cookingclassy.com and came across a recipe for brownie cupcakes with marshmallow frosting that I have all the ingredients for here. Even though our humidity is still high, I think if I toast the frosting with my torch it will be fine tonight.

The recipe that really caught my eye was her recipe for lemon cheesecake cupcakes with strawberry topping, but, alas...I didn't have the ingredients. Maybe another time.

what about a red white & blue trifle .. or a flag cake.

I don't have any fruit in the house and I don't have a car.....the brownie cupcakes are done.

I'm thinking of just making my 7-minute frosting and toasting it....I've made it so many times I know it comes out just right...and super easy since I dissolve the sugar in a bit of water in the microwave and then stream it into the beating egg whites. Then it's just let it beat on high for 7minutes until it's cool. Easy Peasy. And I know it will toast up nicely, just like marshmallows.

I KNOW I've toasted marshmallow frosting on cupcakes before.....

But today I had a heck of a time because I kept catching the paper liners on fire....
