Apple Cake

Mix:
1 ¾ c. Sugar
3 Eggs
1 c. Oil
2 t. Vanilla
Sift:
2 c. Flour
½ t. Salt
1 t. Baking Soda
2 t. Baking Powder
½ t. Cinnamon (optional)
¼ t. Ground Ginger (optional)
4 c. Peeled Chopped Apple
½ c. Chopped Pecans or Walnuts (optional)
Combine dry into wet, stir in 4 c. Chopped peeled apples, ½ c. Chopped pecans (optional)
Spoon the batter into a prepared 13” X 9” baking pan. Bake at 350° for 45 – 60 minutes.
I frosted with a cream cheese frosting when completely cool: 16 oz. Cream Cheese, 1 stick butter, 2 tsp. Vanilla & 2 c. Powdered Sugar ~ Beat until smooth.
