Two thoughts:
I made zucchini chips with my granddaughter. Thinly sliced zucchini, placed on parchment, sprayed with PAM & a very light sprinkle of Kosher salt. Into a 300° oven until dried and crispy....be careful because they tend to stick to the parchment. You kind of have to peel them off the paper. Better than potato chips....
And you KNEW this one was coming - 'cause YOU were the one to buy the tool first! Zucchini/Carrot/Onion Spaghetti. One of our all time favorite side dishes. Don't see any reason why you couldn't add some thinly sliced cabbage to the saute.....just sayin'
